I love the taste of fresh basil, but find it very tempramental to grow. Sometimes I am lucky and manage to produce a good crop. Last year I had so much that it seemed a shame to waste it, so I tried freezing it.

This was surprisingly successful and easy to do. (Simply wash and dry it and put it in the freezer). If you take the leaves out whilst they are still frozen, they are brittle enough to break, and you have chopped basil without any mess. It keeps its taste and texture, and you can use it as you would a fresh herb. It's particularly good in pasta sauces.

I did see an advert for frozen herbs some time ago, but haven't seen them in the shops. Perhaps there isn't a market for them - a much cheaper, and more organic way, is to grow your own.

I have some frozen coriander in the freezer from Birds Eye (just had a look so I could tell you the brand!). I love Basil, its great in pasta dishes. you write some good ops, try writing no more than one a day, you will get higher reads that way (people are lazy and will generally only read a max of one a day written by any one person!). This, combined with getting your name known (by reading, rating and commenting) will get you higher reads per op! Hope this is of some use, you deserve higher reads :-)
