    I actually enjoy cooking. I find it relaxing and de-stressing after a hard day at work and I enjoy adapting recipes to my own tastes. I like nothing better than to open a bottle of wine and sip it as I create. In the past I have led a strange eating lifestyle. I decided to turn vegetarian in my teenage years (whilst travelling with rock bands…you wouldn't believe the stick I got!) then turned back to gradually introducing meat into my diet.     I have struggled with knowing where to put this recipe. Due to the fact I have already written a main meal review I couldn't put it there. Since I don't have a URL to my chicken recipe I couldn't figure out how to suggest a new product - besides I want to publish my review now.     I make these low-cost vegetarian meals quite often as they're extremely cheap and I've got most of the ingredients ready in the cupboard. As you can probably tell, I've not been near any kitchen scales for a while!)     Potato Cakes on a bed of Spinach. The potato cakes make you feel full whilst being a low calorie and healthy meal. Serves 2 Ready in 20 Minutes Ingredients. ~~~~~~~ 300g of potatoes Half tbsp of Dijon mustard 10g of butter 125g of streaky bacon or pancetta Bag of spinach 1tbsp of olive oil Boil the potatoes as you normally would in slightly salted water.
