Three Quick And Easy To Make Budget Meals

Advantages: Great if you enjoy cooking!
Disadvantages: None that I can think of except ...you may not enjoy cooking!

I actually enjoy cooking. I find it relaxing and de-stressing after a hard day at work and I enjoy adapting recipes to my own tastes. I like nothing better than to open a bottle of wine and sip it as I create.

In the past I have led a strange eating lifestyle. I decided to turn vegetarian in my teenage years (whilst travelling with rock bands…you wouldn't believe the stick I got!) then turned back to gradually introducing meat into ...
...many foods as possible I decided to try to adopt a healthier lifestyle but tried to keep the enjoyment of food alive.

These are a few meals that I occasionally cook for friends who drop by unexpectedly and expect to be fed fairly quickly. I find them easy to make as I usually have all the ingredients in the store cupboard, fridge and freezer. I tend to buy pots of fresh basil, coriander and other herbs from the supermarket when they ... more

Mary's Mexican Chicken - followed by soup...

Advantages: Simple recipe, and tastes fantastic
Disadvantages: The chicken spat its fat all over me

...decided to put it in Budget recipes since chicken is pretty cheap! I'm sure that one or two people will decide to give me a 'somewhat helpful' rating as a result, but such is life! === Introduction === On Saturday night we were meant to be having friends over for dinner, and I'd chosen some fancy chicken dish from my Gordon Ramsay book. However, on Saturday morning our friend (who was out with hubby) phoned to say that the plan had changed and ...
...house, but that I could still cook if I wanted, or we could get a takeaway. Initially takeaway sounded appealing, but then I thought that cooking would be slightly more healthy (and cheaper). However, the chicken thing really wasn't suitable for making in advance. And, although I like our friends very much (of course, otherwise they wouldn't be our friends), I have to say that their kitchen is an absolute tip, and I don't fancy cooking in it - ever! ...

COBBLERS, the savoury mince sort...

Advantages: Under a fiver
Disadvantages: Takes longer to prepare i you aren't used to cooking

...have classed this as a budget recipe as I usually have most of the ingredients and I am sure that when you read them, you will agree that they usually hang around your cupboards as well. The biggest expense is mince which is a very cheap meat and I tend to pay about £2 for mine. Savoury Mince Beef Cobbler ─────────────────── Preparation ...
...lot of people looking for budget recipes may be students that have never cooked before! * Place the mince into a pan and brown off. Don't worry about oil, the juices from the mince will stop it sticking as long as you carry on stirring it and begin on a low temperature. * Now take the pan of mince and using the pan with the lid on, drain the juices into a jug, as you would pour water away from vegetables to make proper gravy. Now that you have strained ...

Vegetarian meals on a tight budget

Advantages: Feed a family for less than £2.50
Disadvantages: Fussier meateaters might object to no meat?

I make these low-cost vegetarian meals quite often as they're extremely cheap and I've got most of the ingredients ready in the cupboard. As you can probably tell, I've not been near any kitchen scales for a while!) Lentil Crumble about 10 minutes prep, about 15-20 minutes cooking --------------------------------- Red Lentils (up to you how many you use... I normally use about 2/3 of a coffee mug full) Lemon Juice (can use the one in the bottle, ...
...(a couple of thick slices, a few days old, I usually use the thick end crusts) Cheese (about 50g... vary this depending on how cheesy you want it) Pepper Dried sage (or whatever herbs you like) Oven needs to be on about 200 deg c. gas 5/6. Sausage and bean casserole

Advantages: Cheap, tasty, filling
Disadvantages: the after affects....

...expensive and this is a budget recipe after all! This recipe works out at about £1.20 a head, but I find that I usually have a bowlful of the bean mixture left which I put with a jacket potato for lunch so you get an extra meal out of it too :-D Just one warning, this recipe does have some repercussions. There is no polite way to say this so I do apologise. It will give everyone who eats it wind. You have been warned! ...

Easy Peasy Pudding - Cherry Sponge

Advantages: quick, easy and cheap
Disadvantages: none

This is a really simple recipe which could be made with any tinned fruit. Any sponge mix will do, I use Tesco's budget blue stripe and that works fine. Ingredients: Tin of cherries in juice or syrup Packet of sponge mix Egg Method 1. Drain the cherries, retaining the juice. 2. Place three-quarters of the cherries in the bottom of an ovenproof dish. 3. Make up the sponge mix according to the packet, this usually involves adding an egg and some water. 4. Pour the sponge mix over the cherries. 5. Place in oven. 6. Meanwhile place the juice in a saucepan and add a couple of tablespoons of sugar if it was syrup or 4 if it was unsweetened fruit juice. 7. Heat until the sugar has dissolved then simmer for 10 minutes. Remove from the heat so it doesn't burn your mouth when used. 7. After 10 minutes remove from the oven ...

Recipe of Recipes for Desserts

Simply delicious.

Advantages: Cheap,quick and healthy.
Disadvantages: Lazy me.

In my hectic household I often find it hard to come up with dinners that are quick ,healthy and easy. With three children and not enough hours in the day, finding suitable meals is often in the back of my mind. So when I found these two recipies that are favourites with my kids,I thought I'd share them with you. They are quick, easy, healthy, gentle on the budget and faves of the kids. I know that one recipe is a pudding, but since I am limited to the catagories to put it in,this one will have to do (hope you don't mind). ***Tuna pasta*** Ingrediants- 250g Pasta shells (or twists are fine) 1 small can of tuna (in brine or sunflower oil) 1 small can of sweetcorn 1 tablespoon of olive oil (seasoned olive oil is nice) 3 chopped and seeded tomatoes (optional-depending on tastes) handful of black pitted ...

Basic Fried Rice

Advantages: Yummy
Disadvantages: This particular version not suitable for vegetarians

I love Chinese food, and often attempt to cook it at home, with a varied range of success. I have found that the ability to even knock up a fried rice dish when friends drop round seems to impress, although I'm not too sure why, as it is really easy to prepare and cook. I have listed a basic recipe below, which I use as a budget supper or as one dish in a selection, but sometimes I add other ingredients like strips of (pre-fried) chicken or pork to make a complete dinner. All the quantities are flexible, according to taste - so experiment. Also, this can be a really cheap dish; you don't need expensive back bacon, for example. I use Tesco value streaky bacon and it gives plenty of flavour. It doesn't really matter which type of oil you use either, so long as it is one which can withstand a high temperature - so for this reason, it ...
