    if you look at it this way, if you like cheese, you like any cheese really, because at the end of the day, all cheeses are the same, apart from some are stronger than others. Cathedral Cheddar is a very strong cheddar cheese, yet is is one of the most lovely tasting, mature cheeses around, with a smooth, texture that you could just leave in your mouth to melt. It is just the best Cheese around at present, why, well i will tell you why.     I can vaguely remember from my youth that we were told Cheese is good for you. “Plenty of protein, good for your bones and you a growing boy as well” my Mum used to say to me – I was 22 at the time! Unusually though, despite it being ‘good for me’ I found I actually liked it too. But, back in those days, the choice of cheese basically ran to Cheddar – or Dairylea processed stuff triangles (yuk).     Well what can I say? I pity my mum!! My sister was a 'veggie' and I was just plain 'fussy' (still am!!) We must of been so hard to feed as children!! (there are another two as well, just not as arkward with food!)I dislike a lot of things when it comes to food!! So if I find something I really like you're probably going to end up hearing about it!! Cheese, will only pass my lips if; a) It doesn't sweat... b) It doesn't have mould in it!! c) It doesn't smell like either a)sweat or b)mould or FEET!! Saying this, I pretty much only like Cheddar!!     I really really like cheese - all types - brie, roquefort, camembert, mozzerella, the lists goes on. However I see these as more of a treat and if there's an everyday cheese that I use for my sandwiches, pizzas, cooking or even a little nibble it's got to be cheddar. I've tried a few different varietys and have not been particularly impresssed by the supermarkets own brands but there have been two brands that have stood out to me - Pilgrims Choice and Cathedral City.     If I had to choose my last meal on earth, it would probably be cheese on toast.
