Add the cheese and the mustard. Return the pan to a low heat. Cook, stirring, until the cheese melts. (Do not allow the soup to reach boiling point.) Remove the pan from the heat, season with salt, pepper and paprika. Add the Worcester sauce and serve.

Cheese Soup

Cheese Charlotte
1 thick slice of white bread, cut into cubes 7 fl. Oz. Of milk 8 slices of white bread with the crust removed 3 tablespoons of butter 3 eggs (separated) 11/2 tablespoons of flour 8 oz. Of Cheddar cheese, grated ½ teaspoon of salt ¼ teaspoon of grated nutmeg 4 fl. oz. of single cream
Preheat the oven to moderate 350F (Gas mark 4, 180 C).
Put the bread cubes in a shallow dish and sprinkle over half the milk. In another dish, spread out the bread slices and sprinkle them with the remaining milk. Leave the cubes and slices to soak.
In a large bowl, cream the butter with a wooden spoon and mix in the egg yolks, one at a time. Stir in the flour. Add the soaked bread cubes, cheese, salt and nutmeg. Blend well and stir in the cream.
In a medium sized bowl, beat the egg whites with a wire whisk until they are stiff. Fold them into the cheese mixture.
Line a greased straight-sided, flame proof dish or casserole with the soaked bread slices. Pour the cheese mixture into the dish. Bake in the oven for 35 to 40 minutes. Must be served immediately.
Advantages: Tasty, easy to make recipes using cheese! Disadvantages: If you hate cheese you're stuffed!
Cheese & Leek Cakes.
This is a very tasty and easy to make dish which works well as a vegetarian starter or as part of a main meal. The white stilton with apricots is a good cheese to use because the sweetness of the apricots gives an interesting taste - the crumbly texture of the cheese also goes well too. You can try it with other varieties of cheese if you like, but this is MY favourite! I get my stilton locally from my cheese shop, or direct ... ...between the bacon and the cheese flavours is really nice. Again, this works well because of the crumbly texture of the Caerphilly. I would recommend not using smoked bacon because the flavour is a bit too overpowering - I've tried so I know!

Feta Feast Feta cheese is usually thought as an ingredient for salads, but it's also delicious in hot dishes. Here are a few of my favourite recipes to eat warm. They're all low budget, fairly easy to prepare (though the tarts are not especially quick to make) and suitable for vegetarians.
~.~.~ TOMATOES STUFFED WITH FETA ~.~.~
Ingredients:
2 large tomatoes
100g of feta
3 tablespoons of breadcrumbs
1 medium onion, finely chopped
1 tablespoon ... ...2 tablespoons of olive oil
Instructions:
1. Cut the top of the tomatoes and scoop out the pulp, being careful not to perforate the shell of the tomatoes.
2. In a bowl, mix the tomato pulp, the crumbled feta, the breadcrumbs, and the onion. Add the parsley and the olive oil.
3. Fill the tomato shells.
4. Place in the oven on a baking tray and bake for 15 minutes at 200°C.
I've never tried it but I don't see why you couldn't adapt this recipe ...

...please bring lots of your cheese straws....Every time I get an invite to a party or special occasion that's always added. Since the age of about 10 I have been famous for my cheese straws. So I've decided to share.
Firstly I cannot take credit for the recipe. At the tender age of eleven my mum won a book at school. Being the late 50's typically the book was all about the kitchen and explains everything from how to wash up in the correct order to ... ...a few bits, but the cheese straw recipe caught my eye. So I set to work, and soon my talent was born.
As I said I cannot take credit for the recipe, but I think what you use and how you use it makes all the difference. So get your apron on, sleeves up, and get cooking.

...RACLETTE? Well, as an incorrigible cheese fetishist, I would be extremely hard-pressed to nominate any variety as an absolute favourite. However, with wintry evenings drawing in, Raclette really does come into its own. Furthermore, since both of my local supermarkets suddenly ceased to stock it recently (to my horror!!) I felt it incumbent upon me to do what little I can to raise its profile on these shores!
BACKGROUND: Raclette has a long tradition ... ...meaning "to scrape." The cheese was first produced in the mountainous Valais canton of Switzerland, near the French border, hundreds of years ago. Sorry to anyone who saw this recipe in snacks; I somehow managed to replace it with my cheese and chilli biscuits and can't put two recipes in snacks (how do I do that?).
I love this as a starter or as a lunch, it's really quick and easy to make, and most people seem to like it.
Ingredients:
-4 large tomatoes
-4tbsp double cream
-4 eggs
-4 tbsp grated Parmesan (or hard Spanish cheese such as Manchego).
- Salt and pepper
Method:
1) Hollow out the tomatoes, then leave upside down on kitchen roll to drain (about 15 mins). Be careful not to put any holes in the actual tomato 'shell' here
2) Season the inside of the tomatoes
3) Heat the oven to 180 centigrade/gas mark 4
4) Put the tomatoes in a dish ideally just big enough to take them all in one layer
5) Break on egg into each tomato, then fill up with 1 tbsp double cream and 1 tbsp ...
A quick and easy recipe...OK then, a cheese sandwich!

Instructions
1. Get two slices of bread and put them next to each other.
2. Put your chopping board in the area where you're going to cut the cheese with your knife.
3. Cut the cheese into slices with the knife.
4. Place them on either of the slices of bread.
5. Put the other slice of bread on top of the one with the cheese on it.
6. (Optional) With your knife, cut the sandwich into triangles, rectangles etc.
I have given you a simple, quick and easy recipe, a cheese sandwich. Enjoy!

If you're having a party, these will go down well, but try to create a mix of sandwiches by making cheese sandwiches, ham sandwiches and tuna sandwiches.

You have a four choices of flavour from either plain ,apple cinnamon and raisin, Choc-chip and orange or bacon and cheese! Or simply you could just take the basic recipe and add your own flavourings!
Basic recipe-
45g margarine
175g self-raising flour sieved
half a tea spoon of baking powder
45g caster or light brown sugar
1 beaten egg
150ml milk
6 muffin cake cases
you can either cook the above recipe alone or add the following ingredients to the mix.
Additional ingredients -
Apple , Cinnamon and raisin-
1apple-peeled, cored and grated or finely chopped
50g of raisins
tablespoon of powdered cinnamon
(or instead of both sugar and cinnamon ingredients you could opt. for 45g of cinnamon sugar)
Choc-chip and Orange -
50g Chocolate chips (try not to eat while cooking)
Grated rind of a small orange
