I usually prefer to make cakes from scratch, but since I made some brownies from a Jane Asher kit, which were absolutely gorgeous, I've bought a few other kits to try, the latest being Somerfield fairycake mix.
~Packaging~
The kit comes in a box, which is brightly coloured in pink and blue and has a picture of the finished cakes on the front. The back of the box has the instructions, which are very clearly laid out and have picture diagrams as well.
~What's included?~
In the box you get the following:
* one pack of cake mix
* one pack of icing mix
* one pack of sugar stars for decorating
* twelve cake cases

The only other ingredients you need to add with this kit are one egg and some cold water.

I was making some fairycakes for some close friends at work and I'd never made any before. So I dug out all my mum's old recipe books but sadly they all said different ways in making them. Having the creative mind I do I decided to take a risk and mix all the methods into one. When I took them into work the next day I gave one to each of my 4 friends and then by lunch I had people queuing up trying to buy them off of me.
Recipe
This makes 24 mini cakes or 12 larger ones.
You will need: -
125g(4 ½ oz) of softened butter
125g(4 ½ oz) of caster sugar
125g(4 ½ oz) of self-raising flour
2 eggs lightly beaten
1 teaspoon of vanilla extract
2 table spoons of milk.
Method: -
1. Preheat your oven to 190°C (375°F or Gas Mark 5). Either butter the tin or place the paper cake cases in a cake tray.

I first discovered these when trying to come up with something different for my daughter's lunchbox.
INGREDIENTS
168g/6oz margarine
168g/6ox caster sugar
3 eggs
252g/9oz self-raising flour
1 small mint aero bar
MAKES 24 FAIRYCAKES
1. Set oven to 180/190c or gas mark 5
2. Put margarine and sugar in a basin and cream together until light and fluffy
3. Add eggs one at a time and beat into the mixture
4. Fold in the flour until thoroughly mixed
5. Crush mint aero bar and add to cake mix
6. Place a teaspoon of cake mix into greaseproof cake cases
7. Bake in centre of oven until golden brown and springy to touch
Once cool you can add melted chocolate on top if you like.
These are quick to make and very very yummy.
