***ABOUT GARLIC***
A bulbous plant of the genus "alliums" often referred to as "stinking rose". Over 500 members of this genus including leeks, shallots, and onions in turn part of the allianceae family. The most commonly found garlic in supermarkets is "alliums sativum" means cultivated. This is sub divided into hard neck & soft neck.
ORIGIN
Botanists believe that garlic probably originated in Central Asia thousands of years ago. Clay models of garlic were found in Egyptian tombs.
GROWING
The bulb grows underground and the leaves shoot into the air. Although thought of as Mediterranean ingredient also grown in northern climates. There are a number of garlic varieties you can grow at home, garlic is grown from the individual cloves, growing garlic is self - sustaining.
PLANTING
Choose a garden site that gets plenty of sun with soil that is not too damp. They are planted individually, upright & about an inch (25mm) under the surface. Plant the cloves about 4 inches apart. Rows should be about 18 inches apart.
It is traditional to plant garlic on the shortest day of the year. In the USA and Europe in spring/late fall/early winter. Garlic is a friendly plant & grows well planted with flowers & vegetables - particularly lettuce, cabbage & beetroot. It does not go well with legumes, peas, and potatoes.
HARVESTING
As garlic reaches maturity, the leaves will brown then die away this is the cue for harvest time. Too early and the cloves are too small, too late & the bulbs will split. Once picked dry ASAP.
STORAGE - not in fridge because it is likely to go soft & mouldy. Needs to be stored in a cool dry place, away from direct sunlight.
It has long been considered a herbal "wonder drug". It is used sometime to treat acne, evidence it can assist in managing high cholesterol levels. Modern science has shown that garlic is a powerful antibiotic. The body does not seem to build up resistance. Positive effects continue overtime. Also contains healthy antioxidants.
SIDE EFFECTS: include irritation because of strength, skin rash, temperatures, and headaches.
MEDICAL INGREDIENTS include
Allicin - anti fungal
Diallyl Sulphides - good for blood & circulation, lowers "bad" cholesterol.
COOKING
A useful ingredient in savoury dishes garlic mellows after cooking can be used in vegetarian meals.
Chop the vegetables and crush the garlic, heat the oil in a pan and fry onions and garlic, add chicken and fry until brown, add diced vegetables and chopped parsley, stir-fry for 3/4 minutes. Add vegetable stock and corn flour to thicken, simmer for a few minutes and add yoghurt to taste. The parsley will help to counter the strong after taste of the garlic.
