I was given a Kenwood Yogurella as a gift from a family member who knows I love making my own yougurt. I raise dairy goats so I get to start with raw milk for my yogurt. I start out with the amount of milk I need and heat to aproximately 140 degress. Then I let it cool. Once it has cooled down I add yogurt starter and aproximately 1/4 cup of yogurt from a previous batch. Mix together and add to the cups. I actually let my yogurt set for 8 - 9 hours. It usually comes out thick and not too acidic. Sometimes you can have problems using milk that is ultra pasturized. The only time it has really been too acidic is if I forget it over night. Still thick and good to use.
