Marvellous marjoram oregano

Marjoram grows freely in my garden. Too freely sometimes I am often pulling up stray seedlings everywhere I usually pot them up and give them away.

Origanum has many different species, Origanum marjorana (sweet marjoram) Origanum onites (pot marjoram) Oreganum vulgare (oregano) Oreganum dictamus (hop marjoram) I think I must have at least two of these in my garden. I have a small herb garden and they grow officially there but I have escapes in the flower borders and my wild meadow (lawn)

Marjoram has small white or pale pink flowers. Grows to the height of up to 2 foot 60 cms depending on the species. Oreganum vulgare sprawls across the garden.
I grow them primarily to attract butterflies to my garden. Bees like them too. Marjoram /Oregano has a very pleasant distinctive smell.

Marjoram is the herb to add to your Italian pasta dishes .A spaghetti Bolognese would not be a spagetti Bolognese without oregano/ marjoram A simple tomato sauce with marjoram / oregano added stirred into pasta a wonderful supper dish

Here are some menus where I use marjoram.

There are lots of variations of this basic pasta and tomato dish.
14 oz 400g pasta shapes
8 Tomatoes
3 Tablespoons olive oil
1 Tablespoon oregano
1Garlic clove
Grated cheese to sprinkle on top Parmesan or cheddar is good.

Skin tomatoes (plunge in boiling water for a couple of minutes skin will split easy to peel)
Boil some water. Cut tomatoes in quarters heat oil in pan. when hot fry crushed garlic, tomatoes and oregano for 5 minutes .
Put pasta shapes in boiling salted water and cook till al dente Simmer tomato mix for about 10 minutes when pasta is cooked drain the pasta and stir in the tomato sauce sprinkle with black pepper and cheese. Garnish with oregano serve hot.

Memories of a Greek holiday

8-12 black olives10 cm
4-inch piece cucumber 100 g 4oz cubed feta cheese a pinch of oregano 5-6 tablespoons olive oil, pinch salt Fresh oregano to garnish.
Quarter the tomatoes, slice the cucumber take the stones out of the black olives if you have bought ones with stones in. Cut the feta cheese into small cubes mix all the ingredients together in a salad bowl toss gently garnish with fresh oregano

Have never used marjoram, must be one of the few herbs I haven't. Will try some in garlic bread! Paul.
