The name Marks and Spencers has always been associated with good quality food in my mind. It is true that their stores have come under quite a lot of criticism in recent years but to me their quality of food has never deteriorated and it is still second to none.

I do not shop at Marks and Spencers regularly but if I get the chance I do like to make a few selective purchases. One such treat that I have discovered is their Iced Sponge Cake.

At £1.39 for a 335g Sponge Cake this could be considered to be on the expensive side. However, this may be a Sponge based treat but do not think that it will taste anything like a Victoria Sponge Cake for a moment, because this treat is in a whole different league.

The Cake is rectangular in shape and comes in three different layers each separated with a generous layer of Raspberry Jam and Cream. On the top there is a nice thick layer of Icing.

The Sponge part of the Cake is light with a wonderful texture that is almost fluffy and this compliments the sweet taste of the Raspberry Jam filling perfectly. Whilst the taste of the Cream that is smeared on either side of the Jam sets off the trio and sends the taste buds into sensual overdrive. This is Butter Cream of the finest quality, and although it tastes rich and sweet it is not in the least bit sickly.

I would describe the taste of this Cake as being akin to that of a good quality Wedding Cake or Birthday Cake. It is the sort of thing that I would love to serve to guests and try to pass off as my own but I know that none of my friends would be convinced that I was capable of producing such a masterpiece.

There is a warning on the package of this product that it is not suitable for Nut allergy sufferers since it has been produced in a factory that handles Nuts. Due to the fact that there are a whopping 390 Calories in every 100g of this product I guess that it is not suitable for anyone on a calorie controlled diet either.

If the amount of calories in this product disturbs you then you may be able to take a little comfort from the fact that only free range Eggs have been used in the production of both the Sponge part of this Cake and the Butter Cream.

On a more serious note for allergy sufferers it contains as well as Eggs and the possibility of Nuts, Cow's Milk, Wheat and Gluten.

I was somewhat surprised to discover that this Cake is suitable for freezing. This is something that I have not actually tried since I don't have the willpower to resist consuming it on the day of purchase. It is however handy to know since the sell by date is seldom more than a couple of days in advance.

To summarise: Highly recommended and very, very tasty!
