Christmas Cake recipe - its not too late to bake!
Advantages: Quite straight forward. Disadvantages: Takes up a whole evening.
My house is currently smelling absolutely delicious, as I have been baking a Christmas cake for the past 4.5 hours in the kitchen. It is a recipe that I have used for the past few years, and it really does turn out well. It is taken from Delia, but I have simplified it and omitted some stuff to suit the dietary requirements of my family (removed the almonds for instance, as son allergic).
The book I took it from is Delia Smiths Complete Cookery ... ...have adapted over time.
This recipe makes an 8 inch round, and about 4 inch deep rich fruit cake. Ingredients:
Roll of greaseproof paper.
2lb of mixed dried fruit (I put in any mixed bag, and maybe add some glace cherries) and I soak this in Brandy (half a mug full) for about a week, with a cover over it, and stirring periodically during that time. (alcohol optional, of course).
8oz plain flour;
1/2 teaspoon of salt;

Advantages: Delicious, Healthy, Kids can help, Disadvantages: Not suitable for people with fish allergys, works best with fish not chicken, LOTS of washing up
Posh Fish Fingers with Herby Mayo Dip Ingredients: 3 limes, zest and juice 600g boneless white fish, cut into strips and skinned 125g breadcrumbs Coriander, chopped 50g plain flour 2 eggs, beaten Vegetable oil for shallow frying How to: 1. Combine in a bowl the breadcrumbs, zest of 2 lime and a hanful of chopped coriander in the bowl and season well with salt and pepper. Save some coriander for the mayo dip - around 2 pinches. 2. Take ... ...squeeze the 2 limes you used for the zest over the fish, covering it in juice. Put in the fridge covered with foil or clingfilm. 3. Beat two eggs (free range!) in a smell bowl and set aside, and pour some plain flour into another small bowl and set aside. 4. Amazing apple waffle desert

The best desert ever!! Today I was asked "whats the best desert you've ever made?". well I got to thinking, and then I got to cooking. An hour, two failed reductions, and some burnt graham cracker crumbs later I finally got it right. I've deemed this the best desert I have ever made here's the recipe, try it out. To make things easier prep these ingredients before you begin. For one ... i guess its a serving lol. 1-waffle 1 an apple 1 graham cracker ... ...1/4 cup of red sangria whipped cream Start off by putting a small sauce pan over a medium heat with the wine and sugar mix in it. While that's coming to a simmer chop the apples into small chunks, and add those to the sauce pan. Potato, Chorizo and Spring Onion Salad Ingredients: 750g salad potatoes 2 cloves of garlic, peeled 3 springs of thyme 150g pack of chorizo, diced 1 bunch of spring onion, chopped 6 tbsp mayonnaise How to: 1. Cook the potatoes in a pan of boiling salted water with garlic and thyme for 20 minutes or until the potatoes are tender 2. Meanwhile, dry fry the chorizo in a frying pan until the edges are crispy. Leave on tissue paper ... ...and run under cold water to cool - this will make peeling the skin easier - Discard the garlic and thyme.
