Advantages Totally scrumptious

Disadvantages make sure you keep some back for yourself

I decided to share my two favourite recipes for barbecues. The first one can be adapted to suit vegetarians or meat lovers. The second is very simple but totally delicious.


Honey and Ginger Kebabs:


you'll need:

barbecue skewers (enough for as many kebabs as you are making)
diced (large) chunks of beef, quorn or tofu
diced (large chunks) peppers (I use different colours for brightness)


for the marinade (this makes enough sauce for 6 large kebabs, if this is not enough double or triple all the quantities as appropriate):

6 tablespoons of honey
3 tablespoons of soy sauce
1 teaspoon of powdered ginger


Method:

Skewer the meat, quorn or tofu and peppers onto the skewers in any order you like (I skewer them on meat, pepper, meat etc).
In a bowl mix the honey, soy sauce and ginger. Arrange the kebabs in a large flat dish (I use a lasagne dish) and pour the honey mixture over the kebabs. Cover the dish with clingfilm and place in the fridge for at least three hours (this may be left in the fridge overnight). When ready, remove from fridge and place on the barbecue to cook as normal. Please ensure that if using beef it has cooked properly before eating.

Please note these are sticky to eat but are a real favourite with everyone I know grown-ups and children alike.

Coffee'd Steak:


you'll need:

Steak (1 steak per person. I use fillet or sirloin as it takes the flavours better)
1 cup of cold coffee per 2 steaks (made using 1 teaspoon of coffee to 1 cup of water. TIP: Make the coffee up using luke warm water and allow to go cold. Please do not use hot coffee as it will start to cook the meat)
a large dish (to hold the steaks)
black pepper


method:

Score lines in each uncooked steak and place in the dish (scoring will help the meat absorb the coffee flavours). Pour in enough coffee to cover the steak before placing another steak in the dish then pour in more coffee and repeat as necessary. Once all the steaks are in the dish, give it a twist of black pepper over the top and cover with clingfilm and place in the fridge over night. When ready remove these from the fridge and cook as normal on the barbecue.

Please note if the weather is terrible these can also be cooked on the grill inside. The coffee marinade gives the meat a hint of coffee and nutty taste. This is great served with a jacket potato and butter. Quite unusual but great taste. Must be tried at least once!
