REQUIREMENTS:

Ok you’ve guessed it – a lovely mixed omelette that goes down lovely with some freshly squeezed orange, or Tropicana if like me you’re too lazy to squeeze your own!
THE ACTION / FOREPLAY
Sainsburys Thin Pork Sausages are ever so tasty but if you’ve ever tried to grill them you’ll know that they release an awful lot of fat which simply is not good when grilling – the fat splats everywhere and during my past attempts it has set fire to the grill – oh I can still here the smoke alarm ringing now! To combat this I now oven bake them on 180 degrees for ten to fifteen minutes. This still creates the fat problem but it is not so dangerous. Due to the time involved in cooking them the first thing I do is put the sausages in to cook whilst I prepare the rest of the ingredients. I prefer to do this as opposed to frying the sausages as I think they are fatty and unhealthy enough without adding oil to them as well!
Whilst the meat is cooking I take the peppers and cut them into four by slicing from side to side, taking care to avoid the seeds that are attached to those inside stalks. I throw away the head and the tail and then thinly slice the four segments that I have left. To avoid them prodding out of the omelette it is best to slice them to around 8 millimetres thickness (ohhh aren’t I technical, I bet Jamie Oliver doesn’t measure his – Lol –Oops) Then I half the strips, again to make sure they do not protrude!
The spring onions need to be peeled of the dark green stems, and then have the rooty bits at the end cut off. Once again, I slice them finely – probably to about 5 millimetres thickness.
The plum tomatoes are the hardest bit! They go very squidgy unless you have them in the refrigerator before hand. This ensures they are firm and easy to slice. I tend to cut them in to four or five slices.
Next I prepare the eggs – beating them into a yellowy mush with a whisk. At this point you may like to add a little seasoning of salt or pepper.
THE NITTY GRITTY
With the preparation out of the way, I then heat the frying pan with the oil, to ensure that the omelette does not stick or burn against the frying pan surface (I’ve done that before – what a waste!) I have an electric cooker so tend to heat the oil on number 6, turning this down to number four once the sizzling has commenced.
I then toss all of the peppers, onions and tomatoes that I previously prepared into the frying pan. I let them sizzle away until the onions start to loose their firmness. In the interim I remove the sausages from the oven and slice them in to strips of less than a centimetre in width.
Add the sausages to the pan, mix the ingredients so that one half doesn’t just have all the meaty bits and then pour the beaten egg mixture evenly over the top.
Over the coming minutes you’ll find that the egg cooks and firms up quite quickly, so make sure you tip the frying pan onto it’s side to allow the wet moist egg mixture to seep through to the edge and cook too. Otherwise you risk having an overcooked or burnt underside of your omelette with a raw egg top – Ugh!
At this point I now wish I had bought a pancake maker as described in Amanda Jeans opionion, as I would not have to worry about this residue egg mix or fret about tossing the omelette over! I’m sure such a product would make for much better brekkie!
I prefer to have my egg fully cooked, so I ensure that there is no slimy egg around the surface of the food before laying the omelette onto a plate. I always ensure that I slice the omelette on a surface other than my frying pan, as the cut of the knife can degrade the non-stick surfaces that many pots and pans come with these days.
And that’s it! Except ensuring that your orange / tea / coffee is ready, and perhaps have a little memento for your loved one on the tray, so that when you take them breakfast in bead they are impressed and ready for more!
Cost – Varies due to the fact that the sausages, oil, tomatoes and eggs are bought in larger units – expect to pay around £7 for all the ingredients – bear in mind you’ll have loads of the items mentioned above left over.

Now, although following my wife's recipe will NOT guarantee increasing your life's span, it WILL stoke you up for the day and provide you with the most tasty and healthy dish you can imagine.
KEDGEREE (Serves 2-3 people)
2 pieces smoked haddock weighing approx. 3/4lb
1 onion, chopped
3 ozs butter
2 cups brown rice
... ...black pepper
1-1.5 tbsp mild curry powder
fresh parsley, chopped finely
chicken stock cube
Place washed fish between 2 plates over a pan of boiling water and steam for 10-15 minutes (the fish should be lighter in colour when cooked and will then flake easily). Flake & skin the fish.

Advantages: A substantial breakfast with less effort than you might think! Disadvantages: Don't even start to count the calories!
Whenever I’ve got a house full for breakfast it always involves a lot of men and a visit to any one of (a) a football match, (b) a golf course or (c) a race course. I’m frowned on because I can’t see that what’s being done is hard, necessary work and not frivolous enjoyment. Whatever it is though, it always requires a substantial breakfast to start the proceedings. It’s a Man-Thing, you see.
I’m not keen on spending too long in the kitchen preparing ... ...the night before (or even ages before where possible!) and with a Man-Thing Breakfast that’s quite simple to do.
To start with, supply a large bowl of fruit. I usually prepare this the night before, as it gives the flavour time to develop. Do remember to take it out of the fridge half an hour before it’s served so that it has time to come up to room temperature. I think I've just about covered most times of the day, but as they say Breakfast is the most important meal of the day, I've given this one a little more thought, a breakfast needs to be reasonably substantial and healthy, and not saturated in cholestrol, the following recipies I think achieve those criteria, so eat, enjoy and start your day off well with an alternative Dalesmans Breakfast......

First is my Ma's Fresh Apple Cake...
FRESH APPLE CAKE
Ingredients:
2 cups chopped apple (leave the skin on!)
1 cup sugar
1 egg beaten
1/2 cup vegetable oil
1 teaspoon vanilla
1 1/2 cups of flour
1/2 teaspoon salt
1/2 teaspoon of nutmeg
1 teaspoon baking soda
Blend the sugar with the apples and let stand for a half hour. You can use any apples, I prefer Royal Gala.
Preheat your oven to 180 - 200.
Add beaten egg, oil and vanilla to the apple/sugar mixture.
Then add all dry ingredients and stir well.
Pour in to a greased pan and put in preheated oven. Bake for 35 - 40 minutes.
This cake can be eaten any time, even for breakfast!
