A healthy Indian

This recipe is for one of my favourite curries, Lamb Rogan Josh that fits the bill for a low fat meal.

LAMB ROGAN JOSH

Serves 4

2 cm piece of fresh root ginger, peeled and chopped
3 garlic cloves, crushed and chopped finely
low fat cooking spray
4 cardamom pods, ...

50g cubed lean lamb
1 large onion, peeled and chopped finely
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon cayenne pepper
1 teaspoon paprika
1 tablespoon tomato puree
Salt to taste


Place the ginger and garlic in a small blender and blend to a paste with 30ml water.

Naan - essential to go with curry - nicer than shop bought

Chicken and Butternut Squash Curry

Advantages: A great easy to make supper
Disadvantages: As with all cooking, someone needs to wash up!

I love experimenting with my cooking and usually cook from scratch. This means that whatever I have in the cupboard gets chucked in a pan and if the results are good I will make that dish again. What shall we eat today?

made recipes. The main thing that has been excluded from the kitchen is cooking sauces. I used to buy bolognese sauce, chili sauce, curry sauce etc, add meat and serve. Making the meals ourselves has meant that we add more vegetables and we have more controll over the flavours so we have been able to create much tastier food. I think the most ready made thing we eat now is breakfast cereal. I am very proud of myself considering the fact that a couple of years ago every meal I ate consisted of either oven chips or pasta.
