Blackcurrants + a little Sugar = Microwave Jam!

Advantages: Freshly picked taste! low sugar; No slaving over preserving pans; less washingup; makes creative gifts.
Disadvantages: Need Microwave; your fingers get filthy topping/tailing; the jam gets eaten too quickly

Two years ago, I had finally managed to pick all the blackcurrants from the bushes in my front garden! It was a backbreaking job to "top and tail" all the blackcurrants - it was a bumper crop for five bushes. Some were so small that the berries were almost the same size as the tail…

Anyhow, the best use for mini blackcurrants is jam, and the best way to make jam is in the microwave.

The benefits of making ...
...taste from boiling in a metal preserving pan;
… No slaving over a massive pan on the cooker;
… No constant stirring;
… No trying to keep the jam from burning on the stove or boiling over;
… No trying to wash up an oversized pan in an undersized sink;
… Full, intense flavour, with less sugar required to set.

A minor drawback is my inability to make a large batch at once - I usually make about 2lbs ... more

"I'm in a right pickle"

Advantages: Tastes delightful
Disadvantages: You smell like a pickled granny

There is nothing better than your own homemade pickles and chutneys to have over the Christmas period with all the cold meats and crusty bread or indeed at any time of the year. I hope you will feel inspired to pickle your own later in the year as the vegetables become available. Firstly you need to make some pickling vinegar. Yes I know you can buy a gallon of vinegar already pickled but it really is not as tasty and also your pickled onions tend ...
...not taste very nice at all I'm sure you will agree. == Pickling Vinegar== Ingredients 4 pints malt or white vinegar, 10 cloves, 2 tablespoons coriander seeds, 1 tablespoon mustard seeds, 5 dried red chillies 2 teaspoons whole black peppercorns, 1 cinnamon stick, 1-tablespoon brown sugar. Method Place all of the ingredients in a saucepan. Cover the saucepan and simmer gently for 15 minutes. Allow to cool completely. Strain the liquid and ...

Crab Apple Jelly

Advantages: Easy, delicious, cheap
Disadvantages: Finding crab apples if you don't have them in the garden

...edible. One of my favourite recipes remains one of the easiest, and an excellent one for beginners: crab apple jelly. (“Jelly” just means a clear jam, not the wobbly stuff you have with ice cream, by the way). INGREDIENTS Crab apples, up to 4lbs 1 lemon Sugar, 1lb per pint of cooked apple juice Cinnamon stick (optional) “Crab” apples are small, sour apples; the trees that they come from are descendents of wild, rather than cultivated, apple ...
...growing in my garden; however, if you are not blessed in this way, you may find them for sale at farmers’ markets and the like, although they’re not typically available from supermarkets. EQUIPMENT LARGE pan and lid, preferably stainless steel Clean tea towel or, if you want to be fancy, a muslin bag Ladle Glass jars and lids Waxed paper discs Clear plastic film covers, elastic bands, sticky labels METHOD To start with, rinse the apples ...

Black and blue jam

Advantages: Lovely flavour
Disadvantages: can be expensive to make

...to my Mum's jam making recipes this is the usual setting point but it is always wise to check. One thing I always do to check setting point is put a couple of saucers into the freezer for a few minutes before I start making the jam and when I am ready to test take one out, take the jam off the heat and place a teaspoon of the mixture onto the cold saucer. if it immediately sets and when you push it with your finger the surface crinkles then it has ...
...little too runny then put it back on the heat boil for a little longer testing at 1 minute intervals (hence why you need 2 saucers in the freezer just in case!) - Once setting point is achieved you allow it to stand for 15 minutes and then you can skim off any scum from the surface before jarring up. Your jars must be sterilized. I always do this by - washing the jars (usually old jars that I buy honey, olives, pickles in etc) in very hot soapy ...

Lemon curd and not an E number in sight

Advantages: Tastes wonderful, uses fresh ingredients and simple to make
Disadvantages: Doesn't last very long!

In the face of absolutely massive public demand (otherwise known as jillmurphy – thank you Jill!) I have been persuaded to share my recipe for lemon curd. The next time you go to the supermarket pick up a jar of lemon curd. Have a look at the list of ingredients. Now put the jar back on the shelf. You really do not want something that’s so packed full of E numbers and ingredients that you can’t pronounce. Go to the fruit and vegetable counter instead ...
...some butter, sugar and eggs. Take them all home and I’ll tell you how to make a lemon curd that tastes wonderful and without an E number in sight. You’ll need: 2 lemons 50gr unsalted butter 225gr caster sugar 2 large eggs 1 clean jam jar The easiest way to make lemon curd is in a double pan, but don’t worry if you haven’t got one as a bowl placed over a pan of water will do just as well. Heat the water to the point where it’s just simmering. ...

BIGBAZ WANTS A DECENT SHIRT LIFTER

Advantages: A GOOD OLD FASHIONED TASTE
Disadvantages: SO YUMMY THEY WILL NOT LAST LONG ONCE OPENED

Bigbaz Barry needs a decent shirt lifter to satisfy his cravings so I thought I would try and oblige. A shirt lifter is an old fashioned term used for a really good pickled onion. The secret is to make your own pickling vinegar rather than to buy those awful ready-made varieties. I have tried them but find my pickles go soft after just a few months. The recipe below is one that I like to use each year. I have heard if you add extra chillies it really ...
...wait till much later in the year now to buy your onions at a cheap price but at least you can print this out for your recipe file. First you must make your vinegar and this can be used for pickling most vegetables. Spiced Vinegar 4 pints white vinegar, 10 cloves, 2 tablespoons coriander seeds, 1 tablespoon mustard seeds, 5 dried red chillies 2 teaspoons whole black peppercorns, 1 cinnamon stick, 1-tablespoon brown sugar. Method Place all ...
