Advantages: Yummy Disadvantages: This particular version not suitable for vegetarians
I love Chinese food, and often attempt to cook it at home, with a varied range of success. I have found that the ability to even knock up a fried rice dish when friends drop round seems to impress, although I'm not too sure why, as it is really easy to prepare and cook. I have listed a basic recipe below, which I use as a budget supper or as one dish in a selection, but sometimes I add other ingredients like strips of (pre-fried) chicken or pork ... ...according to taste - so experiment.
Also, this can be a really cheap dish; you don't need expensive back bacon, for example. I use Tesco value streaky bacon and it gives plenty of flavour. It doesn't really matter which type of oil you use either, so long as it is one which can withstand a high temperature - so for this reason, it's best not to use olive oil for example. I tend to use rapeseed.

I have listed a basic recipe below, which I use as a budget supper or as one dish in a selection, but sometimes I add other ingredients like strips of (pre-fried) chicken or pork to make a complete dinner. All the quantities are flexible, according to taste - so experiment.

Basic Fried Rice (for 2-3)
1 medium onion, thinly sliced 2-3 rashers of bacon, cut into matchstick shreds Generous pinch salt 2-3 eggs Splash vegetable oil 300-400g rice, boiled to almost-cooked, and well drained 1-2 tbs butter 2-3 tbs green peas / petit pois 1-2 tbs soya sauce
When you boil the rice, you are aiming to just slightly under cook it, as it will be finished off in the stir fry. Rinse it with cold water to stop it continuing to cook while it drains, or else it will soak up the oil in the stir fry rather than frying.
Add the salt to the eggs, and beat with a fork in a cup or bowl. (The salt prevents the eggs from separating after beating). Cook the peas in a covered bowl in a microwave, until ready (about 2 minutes, depending on microwave wattage) and then add the butter. (If you don't have a microwave, you can stir-fry the peas in the butter in a frying pan - but it's more washing up).
Heat the oil in a wok over medium heat. (If you don't have a wok you can use a frying pan, but it is much easier to invest in a wok, as they're a really handy item for all sorts of cooking). When the oil is hot, add the onion and bacon, and stir-fry for 1 ½ minutes. Push them to one side of the wok and pour in the eggs. Move the eggs about a bit to break them up, and when somewhat set, stir them in to the bacon and onion. Add the rice, mix everything together and break up any lumps. Do this for 1 or 2 minutes. Pour the peas in butter over the rice mixture, then sprinkle with soya sauce. Stir-fry for another minute, then serve.
Advantages: Delicious Disadvantages: If you don't like truffle
...This preparation draws on recipes which come from different Italian regions and it mixes flavours that seem to be incompatible to most of people.
In my behalf I can only recommend you to try it considering that people who made it didn't regret of (to be honest there aren't many people who tasted it but... let me dream to be good at cooking... eh eh eh)

· 100 gr of grated parmesan cheese
· 40 gr of butter
· Extra virgin olive oil
· Truffled oil (I don't know if you have this kind of oil with truffle, but hope so because it's good... if not you can add a bit of truffle in a bit of oil for a couple of days)

Advantages: Easy to make, simple ingredients, quick process, tastes fantastic, light and good for guests. Disadvantages: None...unless you don't like risotto!

===What's It Like?===
It's really easy to make this risotto and pretty hassle free. You certainly don't need to be a chef to put this together. Also it's almost impossible to get it wrong as well, so if you're not used to cooking or you don't normally experiment then this is great for you. The flavours are rich but not too rich, personally I can eat absolutely loads of this risotto I'm not a fan of things that are overly rich in flavour. The ... ...that it's perfectly cooked and very smooth. Because of the choice of ingredients, this is a refreshing and light meal which still has substance because of the chunky veg and rice so it's very filling. It's great to serve to guests as you can make loads in a great big pot, or you can serve two and refrigerate the rest for lunches or dinners another time. So it's economical too.
All the ingredients are available in the main supermarkets, so there's ...

Advantages: Not too expensive, can change to suit taste preferences, easy to make. Disadvantages: Frozen prawns need defrosted, prawns pricey, have to leave rice to cool.
...a whole range of different recipes to get this right so it's pretty much an amalgamation of things I read in student cookbooks and on the internet. Unfortunately I have forgotten where I got some of the ideas but I think it was just random recipes found on google. Some were rubbish but I think I managed to get the perfect combination from using a variety of them. *~Equipment~* ~Cooking Pot with lid. ~Large frying pan or wok. ~Whisk (electric or not) ... ...spoon ~Electric/gas hob. *~Ingredients~* ~Basmati Rice (I use Tesco Value Basmati because it's the cheapest rice) ~Ground Nut Oil (Again, Tesco - Can use other flavourless, preferably oriental cooking oils) ~2 eggs (medium or large depending on how eggy you want it - and I totally advocate barn or free range ones!) ~Garden Peas (Can also use frozen peas - I prefer these ones) ~Soy Sauce (I use Soy Sauce light) ~Cooked Prawns (The priciest item - ...

Advantages: Very filling and more-ish Disadvantages: Only if you don't like peas and sweetcorn
This is an old time favourite, when ever I put it on a buffet somebody always wants to take some home so it never goes to waste but the rice has to be just right cause if it is under cooked or over cooked then it doesnt taste right and the grains need to be starch-less.
Ingredients:
500g Long-grain rice, soaked in cold water, cleaned and rinsed
250g Frozen garden peas
250g Tinned sweetcorn
Method:
1. Put pan of salted water on to boil.
2. ... ...rice and cook it for 12 mins or until the rice is just cooked (al dente).
3. Defrost the peas in the microwave but do not cook them because they are already cooked and it also makes the salad look bright with the colours and they stand out.
4. Drain the juices from the sweetcorn and add them to the salad, mix it and serve in a large bowl.
If you want you could add 2tbsp turmeric powder just to give a different colour. ...

Advantages: Only one bowl to wash up Disadvantages: takes 20 minutes, but it's all in the microwave
This is a bastardised version of a recipe from Good Food magazine. I just wanted to share it with you, I'm not trying to take the credit.
This is a good recipe for when you haven't got a lot in the house. I don't know if it's truly a 'store cupboard' meal unless you like chorizo (which I do). I like it because the chorizo flavours the rice, and it saves you cooking a rice and separate sauce. There's only one bowl to wash up as well due to not using the scales.
SERVES 2-4 PEOPLE (DEPENDING ON APPETITE AND WHAT YOU SERVE WITH IT) GOES WELL WITH SOME FLAT BREADS, SOUR CREAM TOPPING, AND SALAD.
INGREDIENTS
One tin of whole plum tomatoes (preferably a good make)
One chorizo sausage
One tin of sweetcorn
One pepper
One tin of rice (see recipe)
One tin of water
Cajun seasoning (or Pilau rice seasoning)
DIRECTIONS

and reheat. It tastes wonderful served cold.
To vary the rice pudding
Add fresh fruit, tinned fruit or jam.
Some people add a freshly beaten egg to their pudding whilst it is cooking, but not me,
To vary it whilst cooking add dried fruit such as raisins or sultanas
To make it into a true queen of puddings - serve with ice-cream.

Consider the ingredients in a tin of bought rice pudding and the recipe above and you know there is no comparison.
