CHEESE MUFFIN PIZZA TREATS
Makes 4 Preparation time 5 mins cooking time 12 mins
100g Grated Red Leicester Cheese 1 Sliced Red Onion 100g Cherry Tomatoes Halved 4 Tablespoons Tomatoe puree 1 teaspoon Mixed Herbs 2 English Muffins Halved 1 small clove garlic crushed (or 1/2 teaspoon garlic puree/crushed garlic paste)
1. Preheat the oven to 200 degrees Celcius / Gas Mark 6 2. Place the Muffins Halves on a baking sheet cut side upwards 3. Mix the puree, garlic and herbs together 4. Spread each muffin evenly with the puree mix 5. Arrange the onion and tomato halves on top of the puree 6. Sprinkle cheese over the tops 7. Place in the oven and cook for 12 minutes until the cheese melts. 8. Serve warm
Mozzerella cheese can be substituted for the Red Leicester cheese.
PANCAKES WITH A DIFFERENCE
Makes 4-6 Preparation time 5 mins cooking time 15 mins
120g Plain Flour 1 Teaspoon Baking Powder 2 Beaten Eggs 280 ml milk 120 g grated cheese seasoning Oil for frying
1. mix together the flour, salt, baking powder 2. Slowly blend in the egg mixture until smooth 3. Add enough milk to make a thick batter and beat well 4. Add the remaining milk and add 3/4 of the cheese 5. Mix Well 6. Heat the oil in a flat frying pan until very hot ( you can tell by the sheen of the oil rippling and whisps of smoke rising from the pan) 7. Pour in a thin layer of batter and swirl around the pan coating the surface evenly 8. Fry until golden brown on both sides 9. Turn out and roll up 10 sprinkle the tops with the remaining cheese continue until all the batter and cheese is used up.
If you prefer a ready made pancake mix can be used in this recipe
CHEESE AND POTATO DUMPLINGS
Serves 3-4 Preparation time 10 mins Cooking time 45 mins approx
1kg King Edward Potatoes peeled and chopped into eighths 2 Beaten Eggs 1 Small onion finely chopped 250g Grated Cheese Salt & Pepper to season
1. Preheat the oven 200 degrees celcius / Gas Mark 6 2. Boil the potatoes until soft 3. Drain and mash with a ricer or potato masher and leave in the pan 4. Place the pan on a low heat 5. Season and mix in half of the cheese 6. Add the eggs and onion and mix in well 7. Remove from the heat and allow to cool for a few minutes so you can handle the mixture 8. Taking a desert spoon scoop an amout of the potato mixture and roll into balls 9. Roll the balls into the remaining cheese coating evenly 10. Place onto a baking tray and bake for 15 - 20 mins until golden and crusty
A hard cheese is ideal for this recipe
CHEDDAR ROUNDS
Makes 20 Preparation time 15 mins Chilling time 1 - 2 Hours cooking time 15 mins
50g Butter or margerine 120g Cheddar Cheese 40g Plain Flour Pinch Salt Pinch Chilli Powder
1. Using an electric mixer cream the butter until soft 2. Fold in the remaining ingredients using a wooden spoon forming a dough 3. On a lightly floured surface shape the dough into a cylinder about 40 cm diameter 4. Wrap in greased paper and chill for 1 - 2 hours 5. After chilling time preheat the oven to 280 degrees Celcius / Gas mark 4 6. Grease 2 baking trays 7. Unwrap the dough and cut into 1 cm thick slices 8. Place on the baking sheet evenly 9. Bake for 15 min until golden in colour 10. Transfer to a cooling tray

Advantages: yummy, tastey, sweet everyone loves them! Disadvantages: very moreish!!
Ok I really couldn't help myself, as Easter is so close I love to make all kinds of chocolaty sweet things. Plus I also do a lot of babysitting for my brother and sisters children which if you have kid's im sure you know they love to get messy and cook! I think it's just the messy part really.

Advantages: Delicious Disadvantages: Basically fat + sugar...not the healthiest choice, only for those with a sweet tooth!
If you like sweet things, then you can't get much sweeter than Baklava, which is a traditional Greek snack. My husband is completely addicted to it, but I have to ration him because, as you will see, it's not the healthiest option. But it's a lovely occasional treat. I have to admit that I "cheat" slightly by using ready-made filo pastry from Tesco, but if you are a great cook then I expect you could make some from scratch beforehand.
***Ingredients***
... ...400g pistachio nuts, coarsely chopped (can be substituted with walnuts or pecans)
1-2 teaspoons ground cinnamon (optional)

Ack. I can't settle to anything. I've serious reviews planned, honest, I have. Times, however, are too unsettling. Challenges, or recipes, or some other such lightweight stuff are all you'll get from me at the moment, I'm afraid. Sorry! I thought you might like to try my one of my favourites. It's not what you'd call a "proper dinner", more of a weekend lunch or a late supper, hence I'm calling it a snack. It's a rather robust snack. It's delicious ... ...occasions. I call it "That Pancetta and Potato Thing". If you have any better ideas, leave me a comment. For TPaPT to serve four you'll need:
• half a dozen (that's six) medium-sized potatoes
• 250g diced pancetta
• 250ml double cream
• a whole head of garlic
• a medium-sized red onion

I’ve just screwed up my dinner so I’m reduced to Missus L McCartney’s sausage rolls and some bloody toast. I now need a healthy and nutritious meal. So I have decided to make coconut and cherry cookies (110 calories per cookie, weight watchers) and I shall most certainly NOT be making any for that ungrateful oblivious0r or the infamous and blasphemous cookie hater scgproductions. I shall make them and type this almost in real time (ie: not at all).

Sorry to anyone who saw this recipe in snacks; I somehow managed to replace it with my cheese and chilli biscuits and can't put two recipes in snacks (how do I do that?).
I love this as a starter or as a lunch, it's really quick and easy to make, and most people seem to like it.
Ingredients:
-4 large tomatoes
-4tbsp double cream
-4 eggs
-4 tbsp grated Parmesan (or hard Spanish cheese such as Manchego).
- Salt and pepper
Method:
1) Hollow out the tomatoes, then leave upside down on kitchen roll to drain (about 15 mins). Be careful not to put any holes in the actual tomato 'shell' here
2) Season the inside of the tomatoes
3) Heat the oven to 180 centigrade/gas mark 4
4) Put the tomatoes in a dish ideally just big enough to take them all in one layer
5) Break on egg into each tomato, then fill up with 1 tbsp double cream and 1 tbsp ...

On searching for a recipe for Snickerdoodle Cookies I came across your offering and I am very curious to know why have you incorporated Walnuts into this recipe? They have no place in this plain simple snack cookie. Your recipe is neither traditional, cost effective nor a definitive.
It is meant to be a plain soft and chewy cookie with the flavour of cinnamon slowly building up in your mouth, the nuts particularly ones of such a dry and over powering flavour detract from this. By the way I am a lover of all nuts. I have given it one star as some sort of rating was demanded; I feel that this is too much for such a poor offering. Also another annoyance was the demand that I write a review that contains no less that 140 words, sometimes stating you case can be short informative and to the pint. ...

Scooby SnackRecipe
2 cups flour
2 eggs
1 cup Quaker dry oatmeal
1 tbsp. vanilla
1/2 cup cocoa
1 tbsp. walnut extract
1/2 cup sugar
(optional)1 oz. of finely ground herbal medicine
1/4 pound (1 stick) butter
Preheat oven to 350 degrees. Combine all ingredients in a large mixing bowl. If there is not enough liquid to mix all ingredients after five minutes of stirring, add a tiny amount of milk to aid in mixing of remaining ingredients. Taste better before cooking and adjust amount of sugar to your liking.
Place on a lightly greased baking tray and bake for 8 to 12 minutes, depending on how large you made your cookies. Can be cooked for a shorter time for chewier cookies, or a longer time for drier, crisp cookies. ...
