I haven't been on here for ages!
One fantastic soup to have is Carrot and Tomato soup. Just follow these simple instructionsServes: 2 adults and 2 children
Equipment: Chopping board
Medium saucepan with lid
1 large carrot
1 medium potato
500g (1lb) tomatoes
1-2 garlic cloves
1 tablespoon olive oil
900ml (1 1/2 pints) vegetable or chicken stock
3 teaspoons sun-dried or ordinary tomato paste
2 teaspoons caster sugar
Salt and pepper
Small bunch fresh basil, to serve (optional)
What to do
1. On the chopping board, peel and finely chop the onion
Peel and cut the carrot and potato into small cubes
Wash and chop the tomatoes
Peel and crush the garlic
3. Stir the carrot, potato, tomatoes and garlic, then add the stock, tomato paste, sugar and a little salt and pepper.
Bring the mixture to the boil, cover and simmer for 20 minutes.
If you prefer smooth soups, blend the finished soup in a liquidizer or food processor. Reheat to serve in necessary.
