I have to hold my hands up to the fact that this is a recipe found in a magazine and submitted by a lady called Wendy Herzberg from Sidmouth in Devon ...... Thanks Wendy, I have made this three times now and have impressed the people around the dinner table .....
SWEET POTATO & COCONUT SOUP.WHAT DO YOU NEED ~~~~1lb 10ozs of sweet potatoes (the nice orangey ones I used.)
1 onion medium to large.
1 tbsp of mild curry paste ( mild only as you dont want to mask the taste of the coconut)
1 ltr ( 1 and a quarter pints) hot vegetable stock.
300ml ( half a pint ) coconut milk.
1 tbsp ( 15 mls ) vegetable oil.
Heat the vegetable oil in a saucepan and cook the finely chopped onion for 5 minutes until softened.
Add 15ml of curry paste and cook for 2 minutes.Stir in 750g or 1lb 10oz of raw sweet potatoes which you have peeled and diced.
Now add 1ltr ( 1 and a quarter pints ) of hot vegetable stock and 300ml( half a pint ) of coconut milk.At this point you can allow yourself to do a few reckless things as the soup is looking after itself...... Either have a little shimmy to Steve Wrights Golden Oldies or go to the window and see if there are any Wabbits hopping around in the field !!
BACK TO THE SOUP !With everything in the saucepan you bring it back to the boil, cover and simmer for 15 minutes or until the potato is tender.
Pour batches into the liquidiser or food processor and blend until smooth.Return to the saucepan and reheat.
APPEARANCE ~~~~ A saucepan of steaming orange goodness with the aroma of coconut and a hint of curry.Spoon into warmed serving bowls then decorate with cream ( I didn't do this as it is such a creamy soup I did not feel it needed extra cream ) Also I darn well forgot to pick up some cream in Tescos!! ( dont send a blonde to get more than 1 item of shopping!) add some parsley for colour and some freshly ground pepper.
VERDICT ~~~~ I really love this soup .. It has a subtle coconut flavour and that little hint of curry gives it a warming winter feeling.After all the turkey and fatty meat meals of Christmas I really look forward to bowls of steaming soup with a chunk of crusty bread. Lets face it a couple more months and we will be hitting the salads yet again.....
