I actually enjoy cooking. I find it relaxing and de-stressing after a hard day at work and I enjoy adapting recipes to my own tastes. I like nothing better than to open a bottle of wine and sip it as I create. In the past I have led a strange eating lifestyle. I decided to turn vegetarian in my teenage years (whilst travelling with rock bands…you wouldn't believe the stick I got!) then turned back to gradually introducing meat into my diet. After ... ...possible I decided to try to adopt a healthier lifestyle but tried to keep the enjoyment of food alive.
These are a few meals that I occasionally cook for friends who drop by unexpectedly and expect to be fed fairly quickly. I find them easy to make as I usually have all the ingredients in the store cupboard, fridge and freezer. ...have classed this as a budget recipe as I usually have most of the ingredients and I am sure that when you read them, you will agree that they usually hang around your cupboards as well. The biggest expense is mince which is a very cheap meat and I tend to pay about £2 for mine.

I make these low-cost vegetarian meals quite often as they're extremely cheap and I've got most of the ingredients ready in the cupboard. As you can probably tell, I've not been near any kitchen scales for a while!)
Lentil Crumble
about 10 minutes prep, about 15-20 minutes cooking

Red Lentils (up to you how many you use... I normally use about 2/3 of a coffee mug full)
Lemon Juice (can use the one in the bottle, ... ...(a couple of thick slices, a few days old, I usually use the thick end crusts)
Cheese (about 50g... vary this depending on how cheesy you want it)
Pepper
Dried sage (or whatever herbs you like)

Potato Cakes on a bed of Spinach.
The potato cakes make you feel full whilst being a low calorie and healthy meal.
Serves 2
Ready in 20 Minutes
Ingredients.

300g of potatoes
Half tbsp of Dijon mustard
10g of butter
125g of streaky bacon or pancetta
Bag of spinach
1tbsp of olive oil
Boil the potatoes as you normally would in slightly salted water.
When cooked, drain thoroughly and then return to the pan. (To get out as much moisture ... ...butter whilst mashing.
Meanwhile,
Cook the bacon until crispy.
Add the chopped bacon into mash.
Shape into 4 cakes.
Preheat the oven to 200
Melt the rest of butter with the olive oil and brush over cakes.
Bake 18-20 minutes.
Serve on a bed of Spinach.
Per Serving.

This is how the conversation goes chez Sleevie when I take it into my head to try to convert various members of my family and friends to the wonders of pulse. (That’s pulse as in legumes…beans, lentils and the like…not pulse as in ‘general indication of being alive’. Thought I’d better clear that up)
Beans in the UK are pretty much ubiquitous…but mostly only in cans ... ...me wrong; I’m very fond of Mr Heinz’s version of the baked haricot bean. It’s just that there are so many MORE things to do with you haricot…or cannelini…or adzuki…or pinto…or kidney…or butter...or any of the other varieties of beans than to take a tug on a ring-pull and lob the contents of the tin in the microwave for a quick and tasty toasty topping.
And to try to prove it to you…and to the legume-deficient doubters of my close circle of closet ...

I Love Dal and Dahli, both are excellent and good for you. I have adapted this recipie from a book called "the best of Singaporean cooking" by John Mitchell, and avice from indian freinds of mine. The main difference between my recipie and John's on is mine uses more of everything apart from lentils.

...Eventually Mark worked out a budget that we needed to stick to, he stopped his Friday night out with the lads and I realised that I had a responsibility to start looking after the shopping money better. I was pregnant at the time and Charlotte was only two so it was important we ate nutritious food but how the hell did Mark expec tme to do it on 50 quid a week? So I went into it as a sort of game. The first thing I changed was instead of turnng left ... ...we're not really on a budget anymore I like the idea that I can feed the four of us for a fraction of what I was spending when I brought ready prepared meals all the time. I've not included any measurements for the ingredients cos with these you just add however much you want and substitute ingredients with whatever you've got in the cupboard.

I recently read a review on Bernard Matthews Turkey Burgers so being a chef I thought I would share with you my own Turkey Burger recipe!
It is my first review so bare with me!
The recipe served up to eight people, but can be reduced accordingly, or the burgers can easily wrapped individually in cling film and frozen for up to a month. Each burger contains around 400 calories 120g (4oz) Butter or other margarine or spread
1 onion, finely chopped
... ...2tbsp chopped parsley
salt and black pepper to taste
4 tbsp Sunflower oil
It may sound an insufficient recipe for a burger but it is delicious! The ham really adds something! If you use Turkey Ham, then this adds a bit of smokiness to the turkey.
Simply fry to onion in half of the butter until soft but not browning. Leave to cool.
When cool, to the onions, add the turkey, ham, parsley and seasoning and mix thoroughly. Shape into burgers and ...

These fishcakes are brilliant. Cheap to make and often you'll have all the ingredients in the cupboard - great if you don't feel like going out shopping lol. My daughter has suddenly become an avid fishcake fan so when I got given this recipe I couldn't resist trying it out. They are really easy to make and can be fun if you get the kids to join in. You'll need:-
1 small tin of tuna chunks in brine (well drained and flaked)
1 large potato mashed ... ...1/2 clove of garlic crushed
Flat Leaf Parsley finely chopped - optional
Bit of grated cheese - optional
Juice of 1/2 a Lemon
1 egg, beaten
Dry breadcrumbs to coat Salt & Pepper
