When I first came to the UK, I didn't like lamb. See, it's not such a commonly eaten meat in the US, and (probably more relevantly), my father didn't like it, so we never had it when I was growing up - and I mean never.

Cod Loin dusted with Paprika,
served on crispy vegetables in a parsley sauce.
The recipe is for 2 people and is very tasty.
Made this for my wife and she loved it, Try it, it's gorgeous.
Ingredients:-

2 cod pieces
1/2 tablespoon ground paprika. 1 tablespoon of plain flour.
1/2 tablespoon of vegetable oil.
100g of fresh peas.

Cooking instructions:-

It contains cheese so if you have your cheese as a healthy a choice on a red day it is completely sin free.
Pre heat oven to gas mark 6.
Serves 4
6 eggs
1 medium onion
6 medium sized mushrooms
1 can corned beef
28g cheddar or 42 grams half fat cheddar.
1 tomato
Water
Beat the eggs in a large mixing bowl or jug.
Finely dice the mushrooms and ... ...beef (not always needed but sometimes you get a lot around the outside of it.
Mash corned beef and mix into egg mixture.
Grate the cheese and add this to the other ingredients.
If it is too stiff add a little water, it should be a thick consistancy but pourable.
Pour mixture into an over proof dish.
Thinly slice tomato and arrange on top of mixture, if you want to use a little more cheese sprinkle on top.

About this time last year my mom was diagnosed with Diabetes. As you can imagine with Christmas on the horizon she was a bit fed up at the thought of not being able to have her favourite things such as Christmas pudding, mince pies etc.
I went out and bought a book called The Everyday Diabetic Cookbook by Stella Bowling, which is published in conjunction with Diabetes UK and in it was a section labelled ‘festive’.

There were no apples and no sugar at all mentioned in the list of ingredients! I decided to give it a go but expected it to taste nothing like the mincemeat that we were used to.

OK, this has to be the easiest and yummiest thing that you can make for yourself when you are trying to cut down or dare i use the word - DIET!!!!
So what is it?
It is a basically a thick sauce which can be liquidised or left chunky. It is almost like a salsa and can be used cold as a dip.
The Recipe
1 tin of tomatoes(if you are lazy like me you'll buy them already chopped
1 small glass of water
1 chopped onion
2 table spoons of vinegar
2 ... ...you aren't a fan of sweeteners but then there are some calories in it)
1 teaspoon of paprica
1/2 teaspoon of chili (this can be increased or decreased according to taste)
salt and pepper
a splash of worchester sauce
