Pork scratchings, if ever there was an unflattering yet functional name for a foodstuff that's it!!! Before going any further I had better explain to the uninitiated that there are two types of snack bearing the name "pork scratchings" one is merely expanded corn snacks (fake pork scratchings!!)the other is real pig cooked up and put in a bag (that's the one I'm referring to "real pork scratchings")! Now I'm not 100% sure of how pork scratchings ...

I first discovered Pork Scratchings in my old local pub about 12 years ago. They used to hang on the wall in plain plastic bags waiting for the time that someone would be drunk enough to hand over the 50p - invariably that person was me! Pork scratchings aren't everyones cup of tea. They're salty, crunchy and sometimes hairy. I can see why people might not be fans of this snack food and I was one of these people. Pork scratchings are essentially small fried pieces of pig skin, sometimes hairy (well the odd one or two), sometimes chewy and fatty but if you find the right brand they can be mighty fine. They are commonly found on sale behind a bar in a pub because basically have you ever heard of anyone sitting down with a cup of tea and a nice bag of pork scratchings? or served for lunch with a nice salad? no?... well thats because not only is the best accompaniment ...
...The basic recipe for pork scratchings is just pork rind and salt although various different brands add extra ingredients. The most common brand is probably Red Mill. They come in a white packet with a cartoon butcher on the front (not to be confused with Pork Crackles which is a gold packet with a red van on the front). I'm sure that almost everyone knows exactly what Pork Scratchings are, but in case you don't they are basically small pieces of roasted pork fat. These are the only sort that I know of which come in a small, single portion packet and they are relatively nice to eat. Pork Stratchings are made of pork fat and skin cooked at a very high temperature with loads of salt added. The actual taste is very salty, they do not really taste of pork or bacon. Although bacon doesn't really taste like sausages or pork. Pig flesh is obviously very varied. ...wrong i really love this pork snack i just wouldn't want people to know i eat it! its not very ladylike. I first tried a pork scratching about five years ago whilst in a pub with an ex boyfriend who had a thing for bar snacks, while he was at the bar i reached into the pork scratching packet and was horrified at what i pulled out! they really do look like old peoples toe nails! never the less i ate it and was suprised to find it had a moreish taste, ...
