This recipe is for one of my favourite curries, Lamb Rogan Josh that fits the bill for a low fat meal.
LAMB ROGAN JOSH
Serves 4
2 cm piece of fresh root ginger, peeled and chopped
3 garlic cloves, crushed and chopped finely
low fat cooking spray
4 cardamom pods, cracked
2 bay leaves
4cm piece of cinnamon stick
50g cubed lean lamb

1 teaspoon ground coriander
½ teaspoon cayenne pepper
1 teaspoon paprika
1 tablespoon tomato puree
Salt to taste
Place the ginger and garlic in a small blender and blend to a paste with 30ml water.

Recently I had made some Chicken and Pineapple kebabs for tea and was left with 1/2 a tin of pineapple rings in the fridge. The following day I was thinking what to do for tea using the Pineapple rings and as it was Saturday, it is normally curry night in the Paulpry cottage. My favourite from the local Indian Takeaway is a Chicken Balti Kaghani which is made from mint sauce, cream, pineapple and mushrooms, so with me being the adventurous type when ... ...it. I gave it a go and served it up to my husband without telling him what it was it it tasted nearly as good as the one from the Indian.
This curry is a flavoursome curry with using cream and mint sauce.

I'm posting this in curries as if you can rustle up a curry these naan are THE most excellent I have ever tasted. Besides it would be rude to have a home made curry without naan!

Advantages: A great easy to make supper Disadvantages: As with all cooking, someone needs to wash up!
I love experimenting with my cooking and usually cook from scratch. This means that whatever I have in the cupboard gets chucked in a pan and if the results are good I will make that dish again. If not then I know that I will not then I won't bother with that combination again. For example tinned hot dog sausage and cheese risotto is heaven, but olive, salami and egg quiche is not that nice!
Using the "chuck it in and see method" was how I discovered ... ...have repeated this recipe on many occasion now and it is well tried and tested. Therefore I decided to share my Chicken and Butternut Squash Curry with the world of Ciao.
This curry is not too hot as the coconut milk tempers down the heat, but it does have a nice kick to it. If you like a hot curry though just add in more of the curry paste. Alternatively, I have found that if I cook it for longer then the chicken and sauce will take on board more ...

Beef Curry

Recently cooked this for my wife and I and it was surprisingly simple.
A delicious beef curry, not with too many frills but just right.
It will easily serve 2 and takes about 45 minutes, which includes the prep time as well!
Your Ingredients:

200g stewing beef.
1 red pepper.
1 onion.
1 Tablespoon of curry powder.
1 Tablespoon of Tomato Puree.
1 tin of chopped tomatoes.
Optional:
1 clove of garlic
Cooking:

2. Add the chopped onion and pepper and cook for a further 5 minutes. (Garlic can also go in here but as we are both not a fan we missed this out).
3. Add in the tablespoon of Curry powder and stir in.

Vegetable Samosas.
This is also a fav of mine. They're brilliant for buffets and you can also freeze them and have them with a curry. It's my own recipe and it's alot better than the ones you get at a curry house or in the shops.
Ingredients:
1lb + 8oz potatoes, cut into cubes (boil them until al-dente)
oil
1 onion (diced)
2 garlic cloves (crushed)
2 tbsp tomato puree
3 tsp Garam masala
1 tsp ground cinnamon
1 tsp ground fenugreek

This is the easiest Chicken Korma recipe I have come across and its delicious!
Serves 4
Ingredients:
About 1.5kg to 2 kg of chicken breasts cut into small cubes
2 medium sized onions, chopped finely
2 fresh red chilli, finely chopped (take out the seeds if you dont want it to be too hot)
1 teaspoon of Garam Marsala
75g of coconut milk
some ground almonds (about 2 to 3 tbsp)
Olive oil for cooking
For the marinade:

Spicy chickpea curry is one of my favourite dishes and one I could live off if I am stuck for something tasty and vegetarian to eat - Chickpeas surrounded in a spicy tomato sauce. Great served with naan or chapattis and poppadums.
Ingredients:
- 1 tin chickpeas in salted water 400g
- 1 tin plum tomatoes 400g
- 2 tsp of green masala (Roughly grind green chillies, ginger and garlic)
- 1 tsp of turmeric
- 1/3 tsp of salt
- 2 tbsps corn oil
- ... ...of garam masala
- 2 medium cooking onions
- 4 tbsps of chopped coriander

1. Peel the cooking onions and cut them in half, then chop them into half rings not too thick but not too thin either. Place oil in saucepan and let it heat up, soon as oil is hot put in the mustard seeds and let them pop. 1 tbsp coriander seeds
