    Hungry? All the proper cooks on strike? Got a piece of chicken? Groan at the thought of gravy? Can't be bothered to be involved or clever? Don't actually KNOW how to be involved and clever? Still hungry though? Is your name Jill? Well, even if it isn't (mine is though) you just go ahead and grill your chicken, or roast it in the oven, or fry it, or do whatever it is you usually do with it.     Advantages Advantages Real home made stuff. Sense of accomplishment.

    Disadvantages Disadvantages Takes time and effort.

    None of you will know of my culinary skills that rival those of Jamie Oliver and Gary Rhodes, for the simple reason that they do not exist! However, I am not a complete novice in the kitchen and can manage quite well if ever alone and always cook together with my other half at all times. My wife enjoys collecting kitchen gadgets and cooking aides and has said that I was the best acquisition that she has made in that area! Enough frivolity.     Tomato Sauces are low in fat and are very useful in so many ways. You can use the sauce for fish, chicken, pasta and a host of other foods. This is not my own recipe but it is really lovely so perhaps you will try and make it just once. Red Tomato and Red Pepper Sauce 1 pint of vegetable stock 1 large onion 2 cloves of garlic 1 teaspoon of paprika pepper 3lb 5 oz of roughly chopped tomatoes 6 peppers deseeded and roughly chopped Salt and pepper Place all your ingredients into a pan together.     Personally I believe this sauce to be the best pasta sauce known to man nor beast. It's full of flavour and yummy goodness. *ALL MEASUREMENTS ARE GROSSLY APPROXIMATED* You will need 6-10 Largish tomatoes. 1 bulb of garlic...OR MORE. Chilli pepper salt, sugar Olive oil A hard cheese...Parmesan? Fresh Basil - maybe 3 fist fulls. 1 Courgette Preparation *Dice the garlic. *Cut the tomatoes into chunks of 3cubic cm (ish) *Chop the basil roughly. *Julienne - cut or grate the courgette. *Grate the cheese, I tend to use a full triangle of the cheese (about 170 - 200g) However, if you'd like more or ... more

Dalesmans Barbeque Sauce 1 Bottle HP tomato sauce 1 can plum Tomatoes and a good squeeze of Tomato Puree 1 large Onion (quite finely chopped) 1/4 cup Cider vinegar 1 Clove garlic; finely minced 1/3 cup Worcestershire sauce 2 tea spoons Chili powder 2 tea spoons Salt 1/2 tea spoons Pepper 1/2 tea spoons Crushed dried red pepper Combine 1 cup hot water and all ingredients above in pan.     I thought I’d tell you how I make white sauce, which is a staple for many dishes and some people think it’s quite hard to make so might buy it in a packet or not make certain dishes. I don’t do it from a recipe, but from what my mum showed me years ago, so the measurements aren’t exact and you get used to how much to put in by making it a few times. This recipe (1pt milk) makes enough to use in a lasagne for 4-6 people, or for macaroni cheese for 2-4 people.     I have had so many people asking me how I make my wonderful cheese sauce. Until now it has been a closely regarded secret but just for all you lovely cioa readers - here it is. You will need ------------- 2 Tablespoons of Margarine or butter - to lower the fat content use a low fat spread. 2/3 Tablespoons of Plain Flour Grated Cheese - I prefer Mild Coloured Cheddar or Red Leicester but its up to you - again to lower the fat content use a low fat cheese. 1 Cup of Milk - Semi - skimmed is best Salt and Pepper to taste How to do it ------------ Warm a saucepan and melt the Margarine or Butter ... more

    I’ve just discovered the recipe section on Ciao and so thought I’d begin sharing some of my quick and easy recipe ideas. I’ll start with this cheap, low fat and incredibly quick and easy pasta sauce which can be made in minutes at very low cost and tastes delicious stirred through any pasta.     Don't know about the rest of you, but I have tried just about all the pasta sauces there are, I won't bother to name them because quite frankly they are all terrible, and very over priced. It's much nicer to make your own.
