Baklava

Advantages: Delicious
Disadvantages: Basically fat + sugar...not the healthiest choice, only for those with a sweet tooth!

If you like sweet things, then you can't get much sweeter than Baklava, which is a traditional Greek snack. My husband is completely addicted to it, but I have to ration him because, as you will see, it's not the healthiest option. But it's a lovely occasional treat. I have to admit that I "cheat" slightly by using ready-made filo pastry from Tesco, but if you are a great cook then I expect you could make some from scratch beforehand. ***Ingredients*** ...
...400g pistachio nuts, coarsely chopped (can be substituted with walnuts or pecans) 1-2 teaspoons ground cinnamon (optional) Syrup: 400g sugar 500ml water 2 tablespoons honey Juice of half a lemon ***Method*** 1. Preheat oven to 180 C / gas mark 4. 2. Mix the nuts and cinnamon together in a bowl to coat the nuts. 3. Melt the butter - the easiest way to do this is in a bowl in the microwave. 4. Taking My Mind Off It

Advantages: It tastes yumptious.
Disadvantages: You'll have to cook it.

Ack. I can't settle to anything. I've serious reviews planned, honest, I have. Times, however, are too unsettling. Challenges, or recipes, or some other such lightweight stuff are all you'll get from me at the moment, I'm afraid. Sorry! I thought you might like to try my one of my favourites. It's not what you'd call a "proper dinner", more of a weekend lunch or a late supper, hence I'm calling it a snack. It's a rather robust snack. It's delicious ...
...occasions. I call it "That Pancetta and Potato Thing". If you have any better ideas, leave me a comment. For TPaPT to serve four you'll need: • half a dozen (that's six) medium-sized potatoes • 250g diced pancetta • 250ml double cream • a whole head of garlic • a medium-sized red onion • twelve or so thin slices of Emmenthal cheese • a little olive oil for frying As ever, the method is easy. Firstly, you need to peel and dice the potatoes. ...

Eggs like you've never had them before!

Advantages: The perfect breakfast or brunch meal.
Disadvantages: The Hollandaise sauce is the greatest challenge.

Sometimes, not too often, you have one of those weekend mornings when you might have a little extra time to cook yourself a real treat for a late breakfast or lunchtime snack. The next time this rare event occurs I would strongly recommend that you give serious consideration to Eggs Benedict, I promise you won't regret it. In addition to being simply delicious they also have the almost magical power of helping to banish that Saturday night hangover. ...
...you will enjoy this delicious recipe. Before I go on, I am aware that the humble egg has had rather a mixed press in recent years. Now I think that it is due for a comeback as a healthy and protein rich food source. Scares about cholesterol and other nasties have largely been alleviated through the advent of a whole range of new varieties that are genuinely good for you. Apart from being rich in vitamins A, D, B and E they are low in calories; only ...

Mizzjasmine's Scrumptiously Beautiful Cookies

Advantages: They're srumptiously beautiful
Disadvantages: Waiting for the margarine to soften

I’ve just screwed up my dinner so I’m reduced to Missus L McCartney’s sausage rolls and some bloody toast. I now need a healthy and nutritious meal. So I have decided to make coconut and cherry cookies (110 calories per cookie, weight watchers) and I shall most certainly NOT be making any for that ungrateful oblivious0r or the infamous and blasphemous cookie hater scgproductions. I shall make them and type this almost in real time (ie: not at all). ...
...The first thing I notice is that my daughter has pilfered the glace cherries again. So I wait until tomorrow to buy some more. TOMORROW: I now have all the INGREDIENTS: 125g (4oz) softened butter or margarine 75g (3oz) castor sugar 1 egg (of unspecified size so YOU decide) 150g (5oz) plain flour ½ tsp baking powder The obligatory pinch of salt 50g (2oz) desiccated coconut 125g (4oz) chopped, dried rinsed (not in that order) glace cherries ...

Fifteens.

Advantages: The marshmallowey goodness. There's no cooking to be done.
Disadvantages: You might possibly eat it all in one sitting.

These are the best snack ever. No cooking, enough sugar to keep you on a high for a good 4 hours. Also, incredibly easy to make. My class of 29 six year olds made them in May with no tears, tantrums or loss of limbs. Before we begin...I've never had an actual recipe as such for these, I tend to do it by sight, so the measurements given are just guidelines. You will need; - A medium sized packet of plain digestive biscuits (ie, not the ones with ...
...100g tubs, but then, I really like cherries. Add to taste really) - A 150g packet of marshmallows - A tin of condensed milk (I use Nestle's 397g) - A 170g packet of dessicated coconut A wooden spoon Scissors Tinfoil A large mixing bowl A plastic bag (large freezer bags are good) Preparation time: 20 - 30 minutes, plus at least 2 hours setting time in the fridge. Cooking time: none Empty all the digestives into a large, strong plastic bag ...

A challenge to Marmite haters everywhere!

Advantages: It's delicious!
Disadvantages: It's EXTREMELY more-ish!

I thought I’d share with you one of my favourite recipes, for Marmite Tart, something which is absolutely delicious and very more-ish! I originally got this recipe from my aunt who emailed it over from South Africa. Since then, we’ve been hooked on it! Don’t be fooled by the name, it’s not made with a traditional pastry base, but – so long as the right quantities of ingredients are used – holds itself together ...
...or slightly stodgy scone. It is extremely tasty and filling, and you will probably find yourself having to hide it away once you start eating – otherwise you will end up eating one piece after another! There’s no Marmite in the tart itself – the Marmite flavour comes from a delicious “glaze” that goes over the top, and runs down into the tart through little holes pricked into the top. It is ideal cut up into smallish ...

YOU TART

Advantages: Taste so good
Disadvantages: Plenty of lard in the pastry!

...positive comments), my critically acclaimed recipes are back for a second installment! Ok, take that look off your face you know I cant cook, but this new recipe is something I have tried and liked. It is simple, yet tastes great, if even I can make some with reasonable success there is no excuse for the rest of you. What are the little things? Jam tarts, simple really, and here is my way of making them: Ingredients 220g/7oz plain flour 50g/2oz ...
...pastry!! 50g/2oz Margarine 25g/1oz caster sugar Water to mix – as little as possible, see below Pot of jam to fill Alternatively you could buy a pack of ready-made short crust pastry, though you will not get as good a taste, and it can be expensive. This makes a batch of about 20 tarts, feel free to double, triple or half the amount of ingredients to make more or less to your choice. Method Put the flour into a bowl and rub in the lard ...

Cheap hot and tasty..the pizza I mean

Advantages: I guess the title has all the advantages in it!
Disadvantages: None, except that you have to cook it yourself

Ok fellow Ciaoers here goes! As promised, following my op on a certain nationwide pizza outlet and the appalling delivery service in my area, my very own pizza recipe guaranteed to see the sales of home-delivery pizzas slump in your part of the world! So, get a pen and paper or get ready to hit print on your toolbar, this is one you won’t want to let slip by! Not blowing my own trumpet here, just the words (more or less!) of hubby and sons ...
...- Strong white bread flour Salt and sugar Instant dried yeast Cooking oil Tepid water You can either bung the whole lot together in your bread maker should you be fortunate enough to have one (following carefully the instructions for pizza dough for your particular machine) or you can hand knead it. This is where I come across a bit of a hiccup, ‘cos I never ever weigh my ingredients when making them by hand! Never have done and have ...

pass the sick bag please!!

Advantages: you don't have to be any good in the kitchen
Disadvantages: not haute cuisine

Now I know there are a lot of females out there in CIAO-land and you probably know a lot more about cooking than I do So let me emphasise that this Review is NOT for Delia Smith wannabies, its for blokes who find boiling an egg a challenge and students who are skint In my experience cookery books are often useless as they fall into these categories - coffee table adornment, lots of glossy pictures, the food never turns out like this - far too ...

Top with a few bits of torn up cooked ham and either grated cheese (or for the very lazy, thinly sliced) and stick under the grill for a few minutes. Clue: ...

HOW TO COOK A PIZZA

Advantages: scrumptious to eat
Disadvantages: my cooking skills

As its new year, me and the wife have decided that we will be holding a little party, after we have been out to the pubs to celebrate. Because of this we decided that we would cook some pizzas as part of the buffet. He is a recipe if anybody would like to make one or two or three. Base 1 sachet active dry yeast or 10g (half oz) fresh yeast 125ml (4 fl oz) warm water 500g (1lb) unbleached plain flour, plus flour to dust 1 and a half tsps salt ...
...oil, plus extra for brushing Preparation Combine yeast and half warm water. Leave to rest in a warm place for about 10 minutes, or until foamy. Sift together 125g (4 oz) of flour and the salt. Make a well in the centre of the flour. Add the remaining warm water, the cold water and oil to the yeast mixture and pour the liquid into the well. Gradually stir the flour into the liquid until it is absorbed. Sift in another 250g (8 oz) flour. When ...

What else can fill a sarnie?

Advantages: more ways to enjoy two slabs of bread
Disadvantages: you may think I have odd tastebuds

While sitting here pondering todays lunch I overheard a workmate loudly announcing his views on my chosen sandwich filling. The man is yet to be converted to the joys of a tuna mayo & cheese butty! Anyway, I was thinking that if he, a man of the world (his own words), has not tried this, then maybe a few of my fellow Ciao'sers were also still in the dark. And this leads on to my scribblings for today... My guide of what you might not think to put ...
...Tuna Mayo & (strong) cheddar cheese. Many people may think these two just wouldn't go together. But the added flavour of the cheese seems to bring out the flavour of the tuna itself, and altogether makes a well-rounded butty (not literally rounded of course...that'd be bizarre). You just try it! Not too much mayo though, otherwise you risk swamping the flavour of the cheese itself. I first discovered the joys of this filling when the snack trolley ...

Rock Cakes come home

Advantages: Easy to bake, inexpensive
Disadvantages: You may not be able to stop eating

Memory Lane One of the very first things I learnt to bake as a child was rock cakes. I have fond memories of baking these at school before progressing onto trickier things like scones and pastries. I think we started off on these, as they are very quick to make. The thing with rock cakes is that they should look like rocks, but not taste like them. Sadly on the occasion I've purchased these from a shop the consistency is heavy and hard. Now I have ...
