I really love mushrooms and you can’t really buy any good mushroom ready meals so I thought I’d pass on some of my favourite stuffed mushroom recipes. Plus some interesting information!

OK, I have had my weekly chat with my mother, and she has given me an authentic Italian recipe she had in her note book. She has had the same note book for over 50 years, and the pages are mostly loose. I did this recipe this morning, whilst Bernie was getting ready for work. I shall be keeping it for her when she gets off in a little under two hours.

This is a recipe I discovered when I was looking for a quick but impressive starter for me and my friend to make for a girly dinner party! It really is so simple but looks well professional, hehe. There are hundreds recipes explaining how to prepare this dish but I would like to propose you the one used by my father when he was called to cook for, may be, hundred or more guests at a wedding reception (at his time in my village there were no restaurants or eateries and usually the wedding reception was in the bride's family house).
To cook a fabulous risotto first of all you need the right rice: it could be a "vialone" (but not a ... ...Then a long wooden spoon to stir and, if possible, an inside tinplated copper pan.

6 large, ripe tomatoes
115 g ( 2/3 cup) risotto rice or long-grain white rice

I am a blue cheese freak, the stinkier the better so what a wonderful way than to use good old fashioned smelly cheese in two quick and very simple starters.

You will need:
Large mushrooms
Smelly blue cheese any varitey
Butter
Roasting dish
To start with clean your mushrooms and carfeully take out the stems, and load the mushrooms with your chosen cheese. Take a generous knob of butter and melt it ... ...your mushrooms in the dish and cook until all the cheese has melted.
Take them out and poor the remaining juice over the top and serve with a nice watercress salad and large chunks of french bread.

~ ~ ~ ~ ~POLISH MUSHROOMS IN SOUR CREAM~ ~ ~ ~ ~
This is a very old recipe originally from Poland.
450g/1lb button mushrooms, quartered
30g/2 tbsp butter or margarine
6 spring onions thinly sliced
15g/1tbsp flour
15ml/1 tbsp lemon juice
30ml/2 tbsp chopped FRESH dill (you can use 1 tbsp dried but it isn’t as nice)
Pinch salt & pepper
90mls/3 fl oz sour cream (I have used crème fraiche before and it was just as nice)
Paprika
... ...level with the caps before quartering. Melt the butter/margarine in a sautè pan and add the mushrooms and onions. Sautè for approx. 1 minute and then stir in the flour.
Add the lemon juice and all the remaining ingredients EXCEPT the sour cream/crème fraiche and paprika. Cook slowly for approx. 1 minute.
Stir in the sour cream/crème fraiche and adjust seasoning. Heat through. Spoon into individual serving dishes or on top of buttered ...

Prawn Cocktail has to be one of the many starters that appears all over the world........and varies so much. In many places the prawn are drenched with a gloopy orange looking sauce that just screams of food colouring.
My recipe is very tasty a slight variation on the recipe used by most high class restaurants. The sauce that goes with this is nothing like the bright pink or orange gloop jar or tinned sauces labelled seafood or prawn cocktail sauce ... ...4 - 6 people you'll need:
1/2 a small lettuce (iceberg or whatever is your preference) cut into ribbons
1/2 Kg of frozen prawns (leave to defrost overnight in refrigerator)
1 large carton double cream
6 tablespoons of tomato ketchup (or passata)
3 teaspoons of Worcestershire sauce (I use Lea and Perrins as it has a sharper flavour)

MUSHROOM SALAD

150g/5.5 oz firm white mushrooms
4 tbsp virgin olive oil
1 tbsp lemon juice
5 canned anchovy fillets, drained and chopped
1 tbsp fresh marjoram
salt and pepper
1) Gently wipe each mushroom with a damp cloth or damp kitchen paper in order ... ...thinly, using a sharp knife and place in a bowl.
3) To make the dressing, whisk together the olive oil and lemon juice.
4) Pour the dressing mixture over the mushrooms. Toss together so that the mushrooms are completely coated with the lemon juice and oil.

I saw this picture in a magazine, while looking over someone's shoulder. If you like aubergine and cheese, and the idea of them together it is a really great snack/starter. The picture I saw showed a 'tower' made up with alternating slices of aubergines and melted soft cheese. On the side was what looked like a tomato and onion sauce. There was no recipe, but I did not think it could be that difficult to create.
So this is what I did - and thought ... ...will need (contents for a starter for two):
aubergines - one big one
olive oil a soft cheese that you can slice - I used goats cheese
tomatoes - two big ones
onions - one medium
mushrooms - a few small closed ones
seasoning - salt, pepper and some thyme (fresh from my window box)
