I first drank this wine in the village of La Couvertoirade, up in the hills just north of Montpellier many years ago. I was in my early 20s and I hated it! Age leads to appreciation, and it is now one of my favourites . This wine carries the essence of the mountains, hints of refreshing spring water run over tar rope or lapsang souchong tea; memories of thyme and sheep. Maybe my imagination runs away, but it is a wonderfully dry, refreshing drink that improves with food. Try it with cheese, especially roquefort, or fish dishes.
