I find that chicken and tarragon make a wonderful combination. Just coat some chicken portions with oil and sprinkle some tarragon on and then place under the grill. Alternatively you can add it to roast chicken.
Tarragon is great for using in sauces and it has a strong flavour so not much is needed. For a quick sauce just fry an onion until soft, add some tarragon, stir in some cream or creme fraiche, season with salt and peeper and then serve on some chicken.
One thing that I like to do is to add tarragon to some mayonaise (works well with mustard mayonaise) and then spread it onto my sandwiches with some chicken. In restaurants you can sometimes be offered tarragon mustard to go with steak though personally I'm not too keen on that combination.
The herb can be used either fresh or dried and can be found in most major supermarkets. One pot costs about one pound and lasts for ages.
