Righty ho…here are approximate ingredients for a good dinner for three hungry souls who don’t mind something meat free.
1 medium onion, finely chopped 1 medium carrot (preferably organic), finely diced 2 sticks celery (preferably organic), finely diced Cooking oil or butter 3 cloves garlic, minced or finely chopped 1 bay leaf 1 tsp dried mixed herbs 1 chilli, finely chopped or some drops of chilli sauce/Tabasco 150-200g dried soya mince (gives 450-600g rehydrated) 2 400g tins of chopped tomatoes or 500g passata (sieved tomatoes) 250 ml red wine 1 tsp sugar 1 veggie stock cube 75g dry weight of pasta per head (I like wholemeal fusilli)
First grab a large heavy bottomed saucepan and sweat the onion, carrot and celery in a little oil or butter over a low heat until they are soft. This trio of veggies give a good depth of base flavour to the dish and a heavy bottom pan will prevent burning of your ingredients as they cook ! While they are sweating rehydrate the soya mince in boiling water for 1 minute and drain off any spare water.
Add the rehydrated soya mince, minced garlic, bay leaf, chilli, mixed herbs and red wine. Mix, bring to the boil and simmer, reducing the wine down a little by a few minutes cooking.
Add the tomatoes with the stock cube and sugar. Mix and simmer until the mixture is really nice, thick and unctuous so the flavour is really concentrated. Season to taste with salt/pepper and add a generous glug of extra virgin oil to give the ‘Bolognese’ a pleasant slightly oily texture as this dish is quite low in fat.
Serve with the pasta. I really like fusilli as this type of pasta gets easily coated with sauce in between its spiral grooves. Throw on some grated parmesan if desired. For vegans there is an excellent parmesan alternative called Parmazano (I konow it can be found at Tesco).
If you want some booze with this dish then a robust, medium-full bodied, fairly acidic red with a few tannins can be very pleasant. Something Italian would do like a Chianti, a wine from Puglia or Sicily, or if you want to impress and have the cash a decent Barolo.
There can also be infinite variations with the vegetable compostion of this dish so have fun ! Damned healthy too as it is relatively low in fat and high in nutrients as well as having that pasta ‘comfort’ factor which sooths the mind. It also satisfied some of my regular meat eating family and friends which was a relief.

As a vegetarian on a diet, I am always trying to find tasty meals to eat that don't make me feel like I am on a diet, this dish is PERFECT for doing this as it's full of flavour and fills me up, yet is not fattening and all ingredients are good for my health. I actually came up with this chilli after not being able to find my usual weight watchers recipe from one of their cookbooks (due to it having been packed up in a box after moving house) ... ...am also the kind of vegetarian that does not like food that is attempting to taste like meat, the taste/texture of meat is not appealing to me so to eat that would not be enjoyable, and believe me I have attempted it in an effort to be polite after somebody made a 10 mile round trip looking for vegetarian sausages for me to eat… needless to say, I almost threw up on their kitchen floor, even after using lashings of tomato ketchup haha. I am a vegetarian and have tailored and adapted this salad to my needs and preferences.
As a vegetarian,I first found the recipe in a magazine and it is apparently the salad Jennifer Aniston lunches on daily but unfortunately it contained meat...so I first replaced the meat with quorn and then with tofu but I now eat without either as I think it tastes just as good and it's even lower in calories than it was before!
I have also changed some ... ...salad leaves.
I hope you enjoy it as much as I do...
Avocado & Romaine Salad(I'm not going to put specific quantities,just use as much as you need and want, as you may like more of one type of vegetable than the other or you may be serving more people than one):
Cherry tomatoes or Tomatoes on the vine
Romaine Lettuce
Watercress
Rocket
Spinach(optional)
Avocados
Tofu(optional)
O live Oil
Red wine Vinegar

Chilli Paneer
Ingredients
Paneer (INDIAN COTTAGE CHEESE, you can buy the readymade packs) Corn Flour
Dark Soya Sauce
Chillies (red and green ones for colour; use chillies according to how hot you will like it)
Garlic Paste
Ginger Paste
Onion (medium) (for tempering)
1 medium Onion
Tri colour Bell Peppers (green, red and yellow)
Spring Onions
Oil for frying
Coriander
Salt
Cumin seeds
Preparation
First of all prepare the Paneer (you ... ...and place in container
Cut two chillies into little pieces and add to the Paneer
Put small amount of corn flour in to Paneer mixture, (just enough so that all Paneer pieces are coated with the flour, use your won judgement)
Next add a pinch of salt
Finally add some Soya sauce in the Paneer mixture (again, just enough so that all Paneer pieces are coated with the Soya sauce, use your won judgement)

I am not vegetarian but I love that pie. Spinach-pie (Spanakopita in Greek) is one of my favorite. The way I like it best is the way my mother is making it. I have made it several times myself but I can’t beat my mother's who is coming from a place in North Greece that the people there are famous for their wonderfully made and delicious pies(Ioannina- lovely place).

Unlike Dr. Hannibal Lecter, I eat the normal red meat, and lamb is my favourite. As this is the year of the ram, so I thought I might just share one of my lamb recipes with my fellow Ciaoers. Oh, if you are a vegetarian, please don?t go away; just use Quorn fillets instead of lamb chops, or just skip the meaty bit! The following recipe would serve two people.
Lamb chops with roast vegetables
4 lamb chops
2 aubergines
2 green peppers
2 large tomatoes
4 cloves of garlic
Olive oil
Honey
Cooking oil
Salt and pepper
Wash and prepare the aubergines, peppers and tomatoes, and cut them in half. Season the cut-sides with salt and pepper.
