Thank you for taking a look at my review regarding WheatFree/GlutenFree recipes. My interest in this topic began when my husband started to display some of the the symptoms relating to an allergy to wheat/gluten. I had no idea that wheat/gluten appeared in so many things so struggled at first to know what to prepare food wise for my husband. Here are a few of my findings.
Chicken risotto - wheatfree recipe
serves 2-3
200 g risotto rice (arborio)
2 tbsp olive oil
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
8-10 medium mushrooms, sliced
750 ml wheatfree/glutenfree vegetable stock
2-3 skinless chicken breasts, chopped
1 tbsp olive oil
2 tsp dried oregano
freshly ground black pepper
50 g parmesan cheese, grated (optional)

Advantages: No wheat or gluten. Can help dietary requirements. Disadvantages: Very expensive. Tastes revolting.
-stuff-hasn't-impressed-yet...I carried on. So, came the moment when I put it in my mouth...my suspicions confirmed...this stuff was very dry and the taste was far from anything like 'normal' bread. It tasted old and musty (and no, it hadn't passed it's sell by date), and quite frankly, even if I had licked the floor of old factory, I'm not sure there would have been much difference. I had trouble swallowing the stuff and almost choked a few times. This can't be right, I thought, I must have just had a bad slice, so I kept going, but no they were all like it. I felt a sudden sense of sympathy for the poor gluten and wheat intolerant people that actually eat this stuff (although, I have to say, I know a few gluten/wheat intolerant people, who just don't touch gluten/wheatfree stuff due to it's rank flavour and reputation). Not wanting to feel that I had wasted my money ...
Advantages: They taste great, are very filling, and will work well for those on a restrictive diet. Disadvantages: For a box of eight, you'll pay close to $4 (2.45 GBP). And they go really fast!
