Spice of life (Pataks Original Korma Curry Paste)

Advantages: Tasty, Good value, Consistent, Versatile
Disadvantages: Slightly greasy at times

...I have always enjoyed curry and for many years I have made currys using a ready made sauce. I guess as I have got older and more health conscious I have started making my own and frequently use this curry paste as a base for my recipes. The jar holds 290 grams of paste which is of thick consistency and mildy spiced, predominatntly with korma and coriander. The jar itself is of nice design with the familiar Pataks look. This paste has a great flavour, mild yet still undeniably curry flavoured. It works well in curry dishes but I also use it in other dishes such as Mulligatawny soup, or spread over chicken fillets prior to grilling. The paste is slightly gritty in texture and also has an oily element which makes it wise to stir it up well before use. I have tried other pastes but keep coming back to this one for it...

...When you're in the mood to create that yummy curry but do not want to be bothered with sourcing, toasting and grinding all your individual spices then curry pastes can offer a convenient way forward. ~~Is It A Balti or Just A Curry ?~~

Advantages: Not Just for your Regular Curry
Disadvantages: Not Suitable for those with a Nut Allergy

...Balti is not actually the name of the sauce or paste, but is in fact the name given to the dish the curry is cooked in. A Balti is a round bottomed type wok. These curries were originally cooked very quickly over very high flames using meat and /or vegetables that have been marinated and then additional spices added, before it is served at the table in the Balti. You then use naan bread to scoop out the curry. A great way to save on washing up!! This 283g glass jar of Patak's Balti curry paste, with coriander and tomatoes, cost me £1.45 from a local Dehli, but you will probably find it cheaper in the supermarket. For each curry you make you need to use a quarter of the paste from the jar, so in effect you'll get 4 curries from the one jar. Any unused paste needs to be stored in the fridge and used within 6 months of opening...

...Being a big fan of curry's, I have tried many different curry sauces in a bid to find a sauce that barely resembles a curry that you would get in a proper Indian. I have tried different sauces, including Tesco's own, Morrisons own, and also the bigger branded, more expensive Patak's and Lloyd Grossman's sauces. Many of the different sauces that I have tried have been really nice, and many have been very disappointing and a waste of money. ...First a quick note - I hope I'm putting this in the right place - I am writing about Patak's Curry Pastes, not their ready-made sauces. I'm writing this whilst I wait for my dinner to finish cooking. Tonight, Matthew, I'm having a vegetable curry knocked up with the rather delicious Patak's Madras curry paste. Being vegan, "ready meals" are not really in my vocabulary. Sure, there's one or two available, but the rare ones that exist taste like cardboard. And we don't have a microwave. I can't imagine what we'd use it for. But there are times when you just want to throw something together, and a good old-fashioned veggie curry is a firm favourite in the delawney household. ...think about it before, I will marinate the meats in the paste and some yoghurt. About 200-250 g meat to 75 (3 or 4 desert spoons) maybe I will add some mushrooms or/and tomatoes lightly fry for a minute or two then put in the oven in a casserole dish low heat for between 1 and 2 hours. This paste is also good with potato onions spinach and tomatoes coriander is great added to this. This patak sauce usually makes a great dish if yoghurt is added to it makes a nice creamy sauce I like to serve with Nan breads.
