.... The mass shouldn’t get totally stiff yet, but not be runny either. Then put a ring around the pastry case and allot the yoghurt cream on it and put it back into the fridge for another 3 hours. Meanwhile you can also let the fruit juice drip off the fruit. After the 3 hours of cooling the cake take it out of the fridge and cover it with fruit. From ˝ litre fruit juice make an icing, a red one for blue- and raspberries, a clear one for tangerines. Cover the fruit with the icing, let it cool down, take of the ring – and the cake is ready. This fancy cake is not only refreshing, it also looks very nice. My favourite version is the one with the blueberries, because of their dark colour on the white yoghurt cream. Really good. It is also possible to mix the fruit right under the yoghurt cream and then only cover it with the icing...
