Indigo, Mint, Henna and Saffron

...be a geologist’s dream. And for my title? The indigo of the sky, the mint of the verdant areas, the henna of the ochre buildings, the saffron of the spices. Rose petals strewn over our dining tables. Having our hands washed in perfumed water between courses poured from ornate silver kettles. The varieties of foods were all fresh and locally produced, it excited me picking an orange from a tree, providing a very healthy cuisine. We should take note! Our worst meal? The legendary national dish called Bastilla, basically a pigeon pie. I love pigeon, but although the filling was deliciously rich and tender, the pie itself was of filo pastry covered in icing sugar. Too much conflict in taste for my palate! The women collecting and carrying huge bundles of logs on their backs to keep their homes warm during the cold nights...

...its Thursday night so its out to a local restarant and you cant get more local than this. Cafe Saffron has an up to date and modern feel - none of the glas topped tables or school dinner glasses. Nice thick personalised carpet and modern furniture with non of the repetitive and sometimes annoying tunes played from an old tape deck thta you sometimes get. But what about the food ? starters are the usual range and nothing special. The poppadums were great - not dripping in fat, crisp and fresh. Served with a very sweet but gorgeous chutney and basic onion salad - all charged extra but at 50 p not that much extra. For a main course I had Chicken mulai - one of the few dishes on the menu that did not have a sauce - essential if you want to both eat out at an indian and not pile on the pounds. At the top of the comparison lists was the Saffron Walden, Herts and Essex Building Society. This building society is based in Saffron Waldon, Essex and has 12 branches in Essex, Hertfordshire, Suffolk, and London, as well as agents in Norfolk and Cambridgeshire. Also it is in partnership with Liverpool Victoria group. This building society offers the usual adult financial products - Mortgages, Isa, Tessa, Saving Bonds etc etc but also offers a great set of childrens savings accounts. The Ladybird Savings account is aimed at childrens upto 16 years old and offers a great rate of interest - currently (at time of the review) 5.35% - which is about as good as you can get! ...Preparation time:10 min Cooking time:1h servings:6 ingredients * 1kg leg or shoulder of lamb, trimmed of excess fat and cut into cubes * 2 tbsp Argan Oil * 1 onion, chopped * salt and pepper * 1 tsp ground ginger * 1 tsps Rose Harissa * ¼ tsp saffron * 500g shelled peas * 2 tomatoes, peeled and chopped * 1 Preserved Lemon or more, cut into piece * a dozen Casablanca Olives Preparation Put the meat in a large pot with the oil, onion, salt and pepper, ginger and safflower. Cover with water and cook, covered, for 1-1½ hours until the meat is very tender, adding water to keep it covered in its sauce. Add the peas, tomatoes, preserved lemon and olives and cook uncovered a few minutes longer, until the peas are tender and the sauce reduced. Serve. Bon Appetit!!!...
